Your Daily Sweets: What Are You Making and Baking? (2015)
Shelby replied to a topic in Pastry & Baking
I made FatGuy's mom's recipe for lemon bars yesterday. I didn't change a thing except I used a lot more lemon zest because I like 'em lemony. They taste really good, but they are.....very short lol. It's almost like I should have doubled the topping??? Or, is this how some lemon bars are? Here is the recipe http://forums.egullet.org/topic/48757-lemon-bars-best-recipe/?p=693698 -
Thanks for the Crepes--We have those horrid carpenter bees here at my house, too. They always burrow in the garage door. Creepy little bastards. Your meal sounds lovely You just can't beat a good steak on the grill. Paul--That ham is jumping off the screen! Looks delicious! I read up on a thread here about pork tenderloin and also did a lot of google research in order to make sure I made a tender, juicy meat. The studying paid off. I stuffed the loin with homemade croutons that I smashed into bread crumbs, mushrooms and onions that I had sautéed in butter. I tied it up and put it in the oven at 450 degrees for about 10 mins. Then I reduced the heat to 275 and let it go for a little over an hour until my new Thermopen read 157. I let it rest for 15 mins and it was up to 160. Very moist and tender. Phew. I was nervous about it. Breaded tomatoes and creamed peas with new potatoes rounded out the meal. Oh and deviled eggs. Mr. Tenderloin all trussed up I made lemon bars for dessert. I will post those on the dessert thread......they are very good, but very....flat in stature. I used Fat Guy's recipe. Maybe they are supposed to be like that. I dunno.

Beautiful, Gfweb, simply beautiful Love the tulips. Love the pickley stuff. Love the pork. Are those pickled red onions on some of the deviled eggs?

Happy Easter, everyone! I don't have to go to a family dinner today ( yay! ) so I'm sitting around thinking about what I wanna make tonight.....pork loin is in a brine. I want a tender one...so I'm googling. Do I want to stuff it or leave it whole? I have some new potatoes, so maybe creamed peas with those. Deviled eggs for sure. Breaded tomatoes sound good--using some that I canned last summer. And, lemon bars. Maybe some lemon bars. Last night I fried fish. I couldn't hold out any longer. I did them in a beer batter like the onion rings I posted earlier. My husband went to the river and caught a nice drum and small catfish so I did those along with some bass that was frozen from last summer.

Nice to know I'm not alone. Yes on the parboil. But I didn't like the spice mix either. More experimenting must be done.

Just had to say, I just made a batch and your recipe worked perfectly Thanks!!!! I had terrible luck last time (different recipe that used the whole egg instead of just the yolk). Learned my lesson.

Kay, how do you make your pork loin?

MM-I love morels. There are some growing here on our farm. I can smell them. But I can't find them. I was outside all day yesterday working and occasionally the wind would hit just right and I'd look and look to no avail. Kim-Beautiful eggs Last night my husband made chicken quarters on the grill. Very good. I have been wanting to try this cauliflower recipe for a while. I know someone on here made something similar and it looked SO good. I found a recipe online. Cauliflower head dipped in plain yogurt and spices. HUGE FAIL . It was disgusting. The baking temp was too high so the yogurt was close to burning while the cauliflower was crunchy. Way too much chili powder (and I love chili powder). I saved the head....going to scrape off the yogurt and re-purpose it if I can. Thank goodness I made a salad to go along or we would have just been gnawing on chicken lol.

Nice looking ribeye, Mitch. Venison burgers on homemade buns, corn done on the grill and tater salad Taco salads with crappy tomatoes

Well, I just came in from planting. Red onions White onions Lettuce--3-4 different kinds Spinach Collard Greens Peas We'll see if they grow. I have a terrible impatience with planting tiny seeds like lettuce. It infuriates me lol. Next wave of planting will be end of April/first of May. That's when we will plant a zillion tomatoes

Count me as one who doesn't care for soba. I, too, have never had them in a restaurant. When I made them here at home, they tasted.....well...old. Or maybe musty? I'm sure I probably bought the cheapest package.

I'm with IowaDee. We shop at the expired foods store (run by Mennonites) all the time. We've nicknamed it "the used food store" lol--obviously the food isn't used. One of the first places my husband visits in the regular grocery store is the meat section that has been discounted. Nice score on the Nutella Iowa! We talk all the time about getting Velveeta for $2 a box. It's usually around $5.

Kim, I hope you're feeling better! Chili looks yummy. Jo, an omelet sounds good about right now. Don't get stuck in the mud! I had one of those nights last night where I didn't feel like cooking. But, when you live in the sticks, one must either cook....or forage in the fridge for some super old leftovers. Feeling uninspired, I remembered we had corned venison languishing deep in the meat drawer. So, I decided on corned venison hash, eggs from down the road, brussels sprouts, a push around (that's what my husband calls bread with his meal....something he can use to "push around" his food lol) and a bit of homemade hollandaise sauce.

I almost added to my last post that Smithy is obviously way more refined than I am. I would have elbowed my way back to the kitchen.

Oh I bet Rob is disappointed, too! What a great looking meal. That duck looks every bit as tender as you described!

I had a craving for beer battered onion rings last night. Twas a good thing to go along with basketball.....and a chili cheese dog. I finally found a recipe that I like for the rings. You soak 'em in beer and a bit of cider vinegar for a while. Great flavor and softens them a bit so that they don't slide right out of the batter (I hate that).

Easy Peasy Sautee onions in some butter, add chopped garlic...cook for a bit. Deglaze with white wine. Cook until wine is almost gone. Add a cup or two of heavy cream. Cook until it thickens a bit. Add proteins if you wish. Add 1/2 cup or so of grated parm. cheese.

I am now hungry for fried chicken, although I don't wish to make it so I'll be one of those people who show up at your door, BK......except I won't be there to see the baby....... Looks good, Patrick! Yeah I haven't seen Soba for quite a while. Dejah, YUM on the sprouts. I had a few leftover crawdads to use up--I know, unheard of, but true.

Yum, Huiray. I'm so hungry for clams.

OHHHHHHH Menudo. I had the chance years ago to eat a bowl --authentic. Made by a wonderful lady who's son I was friends with. I will never forget it. LOVED LOVED LOVED it. I CRAVE it.

No, I don't save it. I make our boil super super spicy. I let the 'dads soak in there for at least 30 mins. Sooooooo goooood.
