  1. How were the meatballs with pork belly??? I'm starving. I think I would have been face down in that bowl lol.
  2. Thank you! Ok. I will remember that. It never crossed my mind about float until it was too late --I was going to ask here but I was nervous that the jam would start setting up before anyone answered lol.
  3. Thank you!!!! I feel the same way...that green is just.....icky. But, I almost felt like I was committing a heretical act by leaving it out lol. The first time I ever saw hot pepper jelly was when I was in like 2nd or 3rd grade in Colorado. A family up there always hosted a Christmas Eve party and they served both the red and the green over cream cheese with crackers. I thought it was so pretty and festive and it tasted soooooo good. A whole new food for me. After I filled up on crackers, jelly and cheese I then turned my attention to getting my parents to leave because I was terrified that Santa would stop by, see me NOT in bed, and leave.
  4. Ah. Ok, so no pepper pieces. I didn't look at enough different recipes to run across that method. Thank you. I think we will really like the Cowboy Candy. These peppers are hot so I'm hoping the sweet helps lol. YES! The syrup! I skipped the cayenne because of the hot in the peppers and I didn't have turmeric, either, so I just used plain curry powder. Have you used the syrup in different ways?
  5. Ok jelly makers. Did I miss a step? How do you disperse the jalapeño throughout the jelly? Or is this normal? After the jars came out of the water bath I swirled them around but it made no difference. It took forever to de-seed and chop up 2 3/4 cups of jalapeños. And I was nervous. I'm a very new jelly maker. But it set up nicely and it tastes really good. I decided to skip the adding of the green food coloring. Also, I was consulting two different recipes--that were ultimately the same. I followed the directions precisely but they both said I would come out with 6 1/2 pints of jelly. I got 3 with a bit in a 4th jar. Anyway, I have used up all those peppers so I'm happy.
  6. Fried mush! Sigh. I love fried mush. Grammy used to make that for dinner with okra.
  7. I love banana peppers on a pizza....so on any dough type would be gooood.

  9. I'm slowly whittling away on that huge bag of jalapeños. These suckers are HOT. The all green ones are pickled...the red and green are a recipe I found online called Cowboy Candy. They are sweet and spicy. I saved some of the leftover liquid. I'm thinking it would be awesome on chicken wings. Today I'm going to make some jelly....if I can get off my lazy butt.
  10. The yellowish ones on the right are banana peppers. Very mild and sweet. The green long ones on the left look like anaheim peppers to me. And then bell peppers in the middle. I know how you love your green bell peppers.
  11. Instead of a recipe, I'm tempted to send you a razor This recipe is in the book that came with the IP, I think. I think stuffed bitter melon sounds good. I've never eaten it....I assume it's, well...bitter?

  13. Leftover beef and broccoli
  14. Made a really good dinner last night mostly in the IP. Beef and broccoli with jasmine rice. First I did about 1/2 a pound of broccoli. I really really like using the IP for this. If you do it this way it comes out perfect. Tender but with a bit of bite. NO mush at all. 1 cup of water place broccoli on trivet or put in steamer type basket manual low pressure 0 minutes quick release Then I removed the broccoli, dumped the residual water and did the jasmine rice right in the pot 1 cup of water 1 cup of rice ( I didn't rinse it) manual high pressure 8 minutes quick release I used this recipe with a few minor changes. I used a lot more hot pepper flakes. I added shiitake mushrooms. I used a little less brown sugar. Oh and I added a good glug or two of oyster sauce. Will make this again for sure.

  17. Ahhhhh yes, Romper Room....she never ever said my name "I see Joey and Angela and Susie"....never ever my name lol. Then there was Mr. Green Jeans. Good times. I don't remember what brand they were, but they have to be the same as the ones described above with the little pie tins. I liked the chicken ones...but I also remember beef (or some sort of product that they called beef). Those were not good IMO. I'm weird. I liked the gooey crust on the bottom. That was my favorite part.
  18. Welcome home, Chris! I sure enjoyed all of your pics during your trip. You had to have some kind of pickage going on or else your zucchini would have been larger than baseball bats
  19. I bet it's pretty much the same either way. I just found it easier yesterday to bake them a bit. I didn't have room in the freezer for a sheet pan without doing some major moving around.
  20. I spent time yesterday cutting up massive amounts of okra, tossing it with cornmeal and then baking it at 300F for 20 mins. This "sets" it so it doesn't stick together. I put it in zip locks and tossed in the freezer. Next up: jalapeños
