    Dinner 2017 (Part 4)

    Woooo Hooooo!!!!!! 5 more days Thank you I followed this recipe --except I didn't use zucchini and I used SV'd chicken breast --as you know, very tender and good. And, I only put 5 biscuits on the pie, the rest I baked separately because they wouldn't fit in my pan. Oh, and I used a lot more spices. More salt, pepper, lemon pepper and thyme.   3. BUMP The date is rapidly approaching. Added bonus this year is that it falls on the Friday before the Kentucky Derby --always some good races to watch on that day, too. So, I'm trying to decide what to make. Anyone else gonna celebrate?

    Dinner 2017 (Part 4)

    Love the broccoli stem salad! Did you enjoy your new kitchen? Ronnie came in very early in the day yesterday to ask me if I wanted him to take anything out of the freezer for dinner. Translation=please don't throw hot dogs on a plate again tonight lol. So, since it was a very cold and rainy day I thought chicken pot pie sounded good. I sous vide a couple of chicken breasts and away I went. I had plans to make crust but after perusing the interwebs I decided on cream cheese buttermilk biscuits to top it with. I always make mashed potatoes to go with this and we also had some sprouts. I should make this more often. Twas a hit.
  5. Oh how exciting! Fingers crossed on your new house! Artichokes are the new thing I'm trying to grow this year--I always pick something each year. They are VERY slow to germinate and I didn't know that so we will see how they do. Congratulations on your new IP! I am assuming you are going for hard boiled on your goose eggs? I'd start with one egg ....doubling the time on my method would be 10 mins and that seems like too long.....so I would do one egg at 8 mins, low pressure, natural release and into cold water. Let us know how it goes, I'm curious. I have some duck eggs at the moment.
  6. Anyone watched Burnt yet? I can't comment completely because I've tried twice to watch it and have missed the first half both times. I found the parts about the Michelin Star people and how you can tell they are there interesting (if that stuff is all true).

    Dinner 2017 (Part 4)

    I did not feel like cooking last night and I wasn't very hungry...not a good combo for creativity lol. So, hotdogs with homemade buns and frozen waffle fries were on the menu. I usually boil our hotdogs in beer but we were out, so in honor of @HungryChris I decided to make dirty water dogs. I've never seen one in person, much less eaten one so I had no idea what I was doing. The recipe that I settled on was : 2 quarts of water, 2 T. red wine vinegar, 1/8 t. nutmeg and a pinch of cumin. Is that traditional? Anyway, I simmered the dogs in there for a good 30 mins or so. The hotdogs shrunk in size big time lol so there are 2 pictured on one bun.

    Congratulations @HungryChris ! I made Ann T's lemon pepper chicken wings last night. Leftover gravy (I know, weird) and mashed taters and onions and asparagus from the garden.

  12. I wanted oatmeal raisin cookies yesterday. Got everything mixed up and began rooting around trying to find the raisins. No raisins. Yes, I am a chronic abuser of the mise en place system. So, I used a bag of smashed up Heath bars. Pretty good. Kind of a happy accident.
  13. I do equal parts cornstarch and self rising flour with a bit of cornmeal mixed in---say 1/2 c. cornstarch, 1/2 c. self rising flour and a scant 1/3 c. of cornmeal. Whisk that up and then crack open a light beer. Pour it in slowly--you won't use the whole can. Stir with a fork. You want the batter to leave a "trail". I go thinner if I want a lighter batter and I keep it thicker for more heavily battered.

  15. I did a couple of artichokes in the IP last night. After almost needing a chainsaw to hack the tops off I decided that I better go a lot longer than what I found online. Online people cooked theirs for 20 mins. I went 30. Came out perfect

    Yes, I always use the cast iron with an inch or so of oil You're right, it's the best way I copied @HungryChris and his salad last night. I have a lot of veggies that need using and we also had some leftover steak and fried chicken. I bought a couple of artichokes at the store the other day (apologies to people that live in places where the fresh artichokes probably look a lot better than the ones I can get here in Kansas). I was in like 3rd or 4th grade I think, living clear up in the mountains, when we went to a party at someones house. They had steamed artichokes. SO exotic to me. They showed me how to take a leaf off, dip it in butter and scrape the leaf with my teeth to get the good stuff off. I was in heaven. I got chased away from the table because it was supposed to be a treat for the adults and I was hogging it all lol. Anyway, Ronnie had never had a fresh one before, only the canned kind (which he does not like) so I thought I'd make one to see what he thought. Perfect to go with salad night. I did them in the IP--details on that thread.

  21. Yes, hardware store in the paint section. I'm sure even Wal-Mart has them. And places like Hobby Lobby. I tried q-tips too and this sponge thing works much better.
  22. One of these sponge brushes is perfect for cleaning the lip around the IP. I was using a paper towel and a chopstick. This is much better.

  24. I know that more creative ideas will be thought of...today is not a good day to ask me to think lol. But, I came across this link that has several ideas such as stacking beans, rice and chicken to make a rice bowl or burrito. That got me to thinking about @sartoric's wonderful Indian food that she's been making lately.....I bet something like that would be awesome in the IP and you could do it all at once......
