    Dinner 2018

Ronnie caught a lone catfish in a pond over the weekend and it swallowed the hook so he kept it. Catfish and frog legs last night.
  2. That Spanish Rice-a-roni was really good
  3. I'm going to get back in the dip after while 😁 Good morning!!! Our hunter is en route to the airport. I am looking forward to a nap. I made a whole passel of breakfast burritos yesterday afternoon which came in handy this morning. Then, I started on dinner. Onion dip and compressed watermelon. The melon on the left was infused with rum. I liked it. Can't eat very many of 'em though lol. Doves Wrapped in bacon with a jalapeño marinating in Dale's and seasoned with garlic and black pepper All grilled up. Threw some zucchini on the grill too. Yellow squash casserole and fried okra to go with Chum needs a nice long rest...she's all tuckered out And that does it for now See you back here at the end of November for deer season
  4. Aw, thank you Heidi! I had a good time trying something new. I'm going to definitely need one of those cool spice holders.
  5. I made the famous onion dip again. Someone come over here and get it out of my kitchen so I stop eating it. Please.
  6. Awwww, thanks everyone! Chum says thanks, too . She's such a good girl. It's Saturday! No turtle . Another cloudy, cool day. Very fallish. Guys are out hunting/working on the shooting cabin, getting it ready for deer season. I started cooking around 2 yesterday afternoon. I am slow when it comes to making this kind of food and when the guys get home, I'm easily distracted lol. The eggplant were up first. Thanks @heidihrecipe again. There are a lot of spices in this style of cooking! I had everything except for the carom seed (google told me I could sub dried thyme) and the deggi mirch (I subbed crushed Thai chili peppers). I used the food processor to whiz up the onion. Here is everything mixed up and ready to stuff with. It was kind of fun to cut and stuff these cute little guys Next I got started on snacks for the guys. Sausage rolls are always a hit. I know, @Anna N, I know. There was cheese practically touching the rolls. I thought that would be ok since they were distinctly separated by the jalapeño mustard. Imagine my horror when I turned around and saw what Ronnie was doing: I shrieked and slapped the cube off as fast as I could. Disaster narrowly averted. Next I got everything ready for the Thai pork lettuce wraps I thought fried rice sounded like it would go good with all of this so I did the rice in the Instant Pot and then spread it out on a cookie sheet in the fridge to dry out a bit. I waited until the guys went outside and I busted out my can of Spam. Ya'll, Spam is GOOD in fried rice. I kept it a secret until after a few bites had been eaten to make sure I wouldn't have a revolt on my hands I turned the burner on for the eggplant and also heated up oil to fry some eggrolls that I had made earlier and froze. Finished eggplant And a plate I was very surprised when our hunter walked by the eggplant and told me that it looked delicious. I mainly made them for me and to try something new. Everyone ate it and really liked it! Totally different than anything I've ever eaten. Pretty spicy but in a good way. I'm now drinking some coffee and debating on making some breakfast burritos. I have sausage thawed out and even though our hunter leaves tomorrow morning, we will eat on them all week......
  7. This is a very timely subject. My cleaning angel/friend is going through hell right now. Long story short she probably has an auto-immune disease such as Lyme. On top of that she probably has Celiac, too. She is in a lot of pain and has lost a lot of weight--and she was tiny to begin with. She's in the midst of a lot of testing and doing a biopsy next week. Anyway, all this is just to say that we talk about it a lot and I've learned a lot through her. She's been gluten free since the first day of February. Her husband has always needed to be GF so she's used to cooking that way. She's always on the look out for a GOOD GF bread recipe. She really misses bread. I've been sitting here trying to think of who it is on here and I can't remember but someone a while back made a good GF pizza crust out of cauliflower. Hang in there @TicTac (((hugs)))
  8. The following method has never failed me: Large eggs directly from fridge 1 C. water in the IP Place eggs on the grate thingy that came with the IP Close lid and vent Low pressure 5 minutes Natural release Place eggs in ice/cold water
  9. Happy Friday! The guys brought home a mess of doves yesterday which we will eat tomorrow. My goal for that is to have all of the side dishes done early so I can sit outside while we grill. Probably won't happen, but it's a nice thought. Anyway, along with hunting, they went down to the river behind the house and set lines to catch a turtle. Ronnie wants me to make something awesome to eat out of it. I'm thinking of turtle curry to go along with our new Curry Cookoff . I don't even know if turtle curry is a thing, but it will be if they catch one 😎 Turtle bait Bank lines made from branches Appetizers The pizza dough got away from me a bit I was going to make a big salad, but decided on cut up cucumbers and tomatoes and Ranch. Venison burger and pepperoni Venison cheeseburger I was not sure if our hunter would like the cheeseburger one. I woke up craving a piece for breakfast, but they guys took it with them. I am happy he liked it, but I should have hidden it better. Chum at sunrise, looking for doves
  10. Been a successful morning so far. Lots of doves. Chum has been a busy girl.
  11. The guys got a few doves yesterday. The barn kittens got the leavings after they were cleaned. I think they were very happy barn kittens Just came in from the garden A couple of zucchini were trying to hide and grow into boats. I thwarted their plans.
  12. OH I'm so sorry! @Toliver You are a good son, too Good morning!!! Guys didn't get home until about 6:30 last night and got up at 5 this morning. I was planning on sleeping in a tiny bit until at 6:20 someone started riding a 4 wheeler near by. A very loud 4 wheeler. So, I'm up lol. The usual egg/ham/pepper jack cheese sandwiches for their breakfast Salsa from our tomatoes and peppers, guacamole and Rotel cheese dip Pork and hatch chili enchiladas They want pizza for dinner so I'll be making dough later on and since I'm making that I'll probably make some white bread, too.
  13. Oh man. You are a good daughter . This all ties in together...I was removing the InstantPot that held the chili and the handle hit the Pyrex sending it crashing to the floor ( my floor is very unforgiving...you drop, it breaks lol)
  14. Oooooh I like the cornflower....who knew? Fancy Pyrex!
  15. No, no, never too busy . 142.5 F for 6 hours. Then in the cold smoker at 170 F for about four hours. Good stuff. This used to be my only Pyrex 2 cup measuring cup. I've come to the conclusion that today isn't going to be my day. 🙃
  16. Got the watermelon infused using the info from @Okanagancook and also using @rotuts suggestion of using some brown sugar. I did a bag of plain, too. I just love the color of the melon. SV'd turkey breasts are off of the smoker, too.
  17. Sigh. Oh well. Lunch will be easy some other day.
  18. Sooooo......I guess we got our wires crossed. They stopped and ate lunch before they came home from the airport. Anyone want some chili?
  19. I'll pay you later
  20. Good afternoon! Anyone ready for a nap? Or wine? Or both? I realized I had yet to do my fall drawing on the chalkboard so I quickly scribbled out a pumpkin. I don't think it would even make it as tacky motel room art. 😂 I've got venison chili for lunch in one Instant Pot keeping warm and I've got pork cubed up in the other for enchiladas tonight. It's about 60 degrees and a beautiful day
  21. I wish I could do the laugh and thanks button at the same time. I appreciate all of you so much. Ok, I'm off to bed. I wanted pizza for dinner...but...after today, I didn't have the energy to make dough. Which is absolutely ridiculous because this salad and soup took way more effort. BUT it used up some leftover tuna and steak. Fresh tomato soup Salad with leftover steak and some tuna made into tuna salad edited to add.....I made fresh Ranch dressing from seasoning from Penzey's, buttermilk and homemade mayo. No dipping of pizza was involved....... Good night ya'll and I'll see you tomorrow
  22. Glad to help It's hard to remember to do stuff like that!
  23. I was a bit surprised, too, but it was definitely cloudy/dirty. I've been keeping track of how many times I've used it (give or take a few) and I'm at about 100. The instructions said to change it after 200 so I dunno. But it's all nice and clean and ready to roll now I'd be happy to come do yours
  24. Thanks! Yeah, it was time to change it. I'm glad I looked yesterday.
  25. Think it's ok to be in the fridge longer than 30 mins....like overnight?
