  7. Heresy! 🙂 A few years ago I made lox deviled eggs,or tried-to. Mixture makes sense, right? Lox, yolks, onion. Couldn't taste a bit of the lox or onion though. I took away the yolk and it tasted like it should've.
  8. No yolk. I’ve found that the yolk so coats the tongue in a deviled egg that it becomes all you taste. Perhaps I could’ve sprinkled yolk bits on top. ... Henry got the yolks!

  11. Looks like I’m one of the few who uses the DR table for eating. It’s either there or outdoors in nice weather. We have a kitchen table that gets used for breakfast and maybe lunch.

    Sous Vide Turkey

    140 is ok ...just...until you pan fry the breast to crisp the skin. I need to chill the 140 breast prior to crisping. A PITA. I think 135 f and then into a hot pan is the trick.
  15. Nasoya brand. If I kept turning it crisped. I think I needed a drier filling though.

  19. All true but the noise can be mitigated b y decreasing reflectivity of walls and ceilings...and by lowering the music volume. They intend it to be noisy.

  21. I hate loud restaurants. A while ago I was in a horribly loud one and measured the db level. About 30 minutes later it was much quieter...measured again...same number. I think that our hearing must accommodate to the ambient noise level. Which doesn't excuse it FWIW NYC restaurants are the loudest I've seen/heard

    Sous Vide Turkey

    I roasted the dark meat and SV the breast at 140 for 3 hours. The skin was crisped in a hot pan. Worked very well all around
