I've asked @Chocolot to weigh in. It's her area of expertise.

Yes - I've made a number of the cream recipes from that book. What dissatisfies you about the chocolate cream recipe you are working on?

Indeed I have - way back when I made an imitation of one of the popular Sees recipes - lost it in the great hard drive crash of 2014!

I'd say that's a very fair assessment of what she is dealing with and the two of you share many similar challenges.

This picture shows old fashioned 'creams' - you'll get your best recipes for these from our own @Chocolot's book Candymaking. It's out of print - but you'll notice used copies for a very reasonable price.

Looks good - can't wait to see how it goes with the colours.

Never had any luck tasting warm chocolate and determining what it is going to taste like as a bar.

@paulraphael's Brown Butter Muscovado Chocolate Chip Cookies You would not believe how good they smell in the bowl!

True that!

Why don’t you put the induction hob on the floor?

That would be the Closet Negroni!

Following the Esquire formula we made our cocktail tonight using Havana club anejo, fragoli, lemon and Aperol - we are considering calling it a Flaming Archie

One of those plug-ins actually had two cords attached so I could probably run two EZtempers

Here’s what the 12 V cords are helping me test out - the little battery pack has been neutered by me to remove the jumper cables. It came into this country without its 6.4 amp hour battery and I found a 4 amp hour battery at Crappy Tire for not a ton of money. It will run an EZtemper for about 10 hours.
