  7. Our group of 10 was plagued by last min excuses for today's big lunch...I mean really..." 'I am in the middle of reopening a restaurant'...'my 94 yr old grandma needs a ride somewhere' and, and 'It's Raining'". So Dana, Karl and I braved the clouds and headed north from Jersey to see Geoff. Who took some time from his new restaurant Pineapples Steakhouse, near West Point, to greet us. As usual the faintest wiff of smoke hits you when you walk in the door and you view the memorabilia on the walls and head for a table. Iced tea (with generous refills) Sam Adams and Boylans cherry soda to read the menu over, with an app portion of ribs soon on their way. Karl had to do it...he ordered The PIG OUT 1/4 chicken 1/4 rack of ribs BBQ Braised beef pulled pork sausage chili and 3 pieces of corn bread He ate the whole thing except for the bites of sausage and beef that we snagged away. I went for the 1/2 rack with skin on french fries and cole slaw ( I love their slaw it has a great white pepper accent). Danas choice of pulled pork sandwich with sweet potato fries was a thing of beauty, and those fries are damn good. After a recent passable BBQ meal I felt urge for what I believe to be the best local Q and it did not fail. Go North eaters....or South if need be just GO tracey oh yeah on the way home Karl mumbled something about Geoff being evil

  9. Aunt Millies till I gave up and now just buy canned tomatoes and work from there.... But for the occasional splurge Raos' Arrabiata is to die for ...and just spicy enough to kill some folks. ( I know the Italian sensability for chile flakes, ya get some , ya dont, ya get alot)....Raos is a more consistant heat...its damn good even for 8 bucks tracey
  10. Thanks for answering a related question that I hadnt asked yet....Going on a long "bike" ride with a diabetic in June...of course long is 800 miles and the bike is a Honda. I assume he knows how to prepare for this ride but I wanted to have some stuff for him just in case...I know candy would melt and juice would get warm...but Dried Fruit is perfect tracey

  12. Oh yeah Burger King way back when they had a salad bar.... The original "creation" was an onion ring topped with pickle and cheese run through the broiler Quickly followed by Orange drink Syrup mixed into Vanilla shake....Creamsicle shake We deep fried all the veggies from the salad bar especially mushroom slices for burgers...but we deep fried lots of stuff just to do it boy do I miss the days of slipping an expired burger into the waistband of the orange polyester pants to chow down at the dumpster tracey
  13. Gee I didnt realize tonights dinner was the hot trendy thing for this weekend. After I decided to freeze the chicken staring at me for the past 2 days...I decided on shrimp and asparagus risotto. Made up some chicken stock from base with asparagus trimmings scallion and shrimp shells, sauteed the rice with scallion and a smashed garlic clove and started to hit it with the stock. Dusted the shrimp with cornstarch and cayenne and sauteed with more garlic and scallion. The asparagus went into the risotto in the last few min...shrimp got some butter swirled in and plated with romano cheese....Yummy tracey
  14. So...its not a butt......I have an 18# ham just out of its brine waiting around for tomorrow morning. I'm gonna smoke him. Now I want it to taste like ham not BBQ Butt should I rub it with anything in the morning or just some brown sugar later in the day? tracey

  16. I think I love you all right now....After I worked 20 yrs in food service New Jersey went to the glove law last March. I spent the summer working in a place that you only had to wear 1 glove on your left hand...right hand for knife handle, slicer handle, door handles....after that I just gave up. can someone teach me Excel - I'll feed ya tracey

  20. Many fruit orchards will give away their prunings or sell them at a nominal cost. They are more usable than split logs in most smokers. Jim ← Jim that is what I had planned on doing this spring.... My friend works for his town Dept of Public Works and this load was from a tree they took down after a storm. He is threatening/offering plenty more firewood for winter. I see free heat....hubby sees splitting logs all summer tracey

  24. They use crap cheese because it melts evenly. Someone posted their desparation in making a strombolli that wasnt runny/squishy....they didnt want to use crappy cheese. Fresh mozz and real cheddar dont melt well, as touted in the Velveeta commercial for nacho dip. I have to say that I now want a plate of broiled Mozz with herbs and olive oil with nice crostini to spread it on. T
