    Uni-Fest

    Ok.. So my buddy has been wanting me to make him an Uni centric dinner.. I have very little experience with the product besides eating.. I really love the freshness of uni and thinks it pairs incredibly well with shiso leaves and cream.. 1)Soup: Start with an uni lobster bisque.. Add big chucnks of lobster into the soup.. 2)Salad: Either an uni salad dressing or make a salad and have uni bruschetta served on the side.. I could use a lot of help here.. Maybe a salad dressing made from uni mayo.. I also really like the idea of adding uni to scrambled eggs..Pink eggs? 3)Pasta: Pasta here is a tricky one.. I wanted to do Fried Uni Rice balls with mozzarella.. Or there is Fettucini in an uni cream sauce sprinkled with shiso on top..(In the cream sauce you can also leave whole pieces of cooked uni for texture) Or I could do fried uni raviolis, or just uni risotto? But something is missing in the rissotto it seems to plain.. 4)Steak: I was thinking something like a petit filet with uni butter over top.. Uni grits on the side.. Uni grits is a take on the Southern Shrimp and Gritz thing.. Desserts: Uni Cream Brulee, Uni Ice cream somehow? P.S I cant get out of my mind Oyster Po Boy with an Uni Garlic Mayo Dressing. Anyway, would love to hear suggestions.. What are some of your favorite Uni Combinations or dishes outside of the traditional applicatioins.. Thanks, Daniel
  7. Well another option would be to look on sites like www.lodgis.com.. Here you can stay in furnished apartments in new york.. You get a lot more room, a lot more privacy.. You also get a fridge and a kitchen.. You can stock your room with many items you would normally pay a ton for.. I have traveled like this is France and it was awesome..

  10. That's really high on my list - getting dressed up in my best - heels and all - and schlepping around Manhattan at night in the subway . I don't care where a guy has made reservations - that's a good way to piss off his wife or SO on her birthday. I think an essential part of the dinner experience is a nice trip to and from the restaurant. Robyn ←
  11. I know the process, I am asking how is it done.. Is there pain numbing medication involved.. I know they dont use stiches or bandages after the procedure... I have seen what the do to bulls on a farm.. The just cut them off with out much warning or concern.. Or sometimes they wrap a rubber band around the testicles and wait for them to turn black and pretty much fall off.. I dont hear legislation banning Rocky Mountain Oysters..
  12. Despite the arguement, I just bought a 4 lb block at 30 dollars a lb from Dartagnan.com in the freezer section.. I am so happy.. This will bring my supply up to 7 lbs.. Please talk amongst yourselves.. Does anyone know the process chickens go through to become Capons? Any worse then being over fed?
  13. Hey Simon, In terms of hotels, would you think about using priceline.com.. Its a great site for hotel rooms.. And unless you are getting a suite or something, you end up getting the same rooms just a lot cheaper.. Check out the website..

    Making pasta at home

    I use a ton of cornmeal to sprinkle over the pasta after i cut it into fettucine.

  16. Emma, Really impressive performance..You seem very comfortable on a camera and one can get a sense of your wonderful personality.. You looked like the best cook out there.. Such a smart move to braise the buffalo.. You were funny concerning the Jerk part.. Five habeneros and they are saying its flavorless? And I wouldnt think someone would deduct points for a butter sauce having too much butter.. Congratulations, you represented NYC really well..

  21. I watched the show for the first time today.. Thanksgiving.. I know why I have been seeing this topic discussed so much.. Show seems like fun. The cooking was disappointing.. Are the contestants chefs in real life? Or is it a mix of cooks and people who they thought would melt down on camera.. Is that Miss Rushdie?

    Blaue Gans

    Arrived here around 10:00 with the little one.. We are not horrible people, we were having an extremley rare night and what the heck.. If a 6 year old is out this late, she might as well be eating a boat load of ice cream as well.. It has been awhile since we had eaten here, so the only thing that was still in my head was the Squirrel.. A dish of hazel nut ice cream, with the meringue cookie, whipped cream and caramel sauce.. The bowl was the size of the little ones head.. We ordered some espressos and this Ice Coffee Parfait.. It had espresso ice cream.. I must say, it was a little unusual to arrive at this upscale bistro at 10.00 on a Saturday night with a 6 year old.. However, the manager was really so nice and welcoming.. Although the place was packed, there was one table up front that seated 6 people.. He had no problem giving us the table.. That says a lot because it wouldnt be outrageous for a manager to hold the table for a larger party and turn us away.. This has happed to me at many places including some of my neighborhood spots.. Actually one, which I will never go to again.. After we ordered desserts and coffee our waiter came by and asked if the little one wanted a plate of free french fries.. We said no thank you and he came back with a free third dessert.. This was the one bite chocolate lollipops served with a vanilla milkshake.. The sticks are coming out of a wooden box with holes, at the end of the stick is chocolate, dipped in batter and deep fried.. You take a bite of the cake and the chocolate melts in your mouth.. A very refreshing sip of vanilla milkshake puts it over the top.. We had our desserts and were out of there in a 1/2 hour tops.. Again, I was so impressed with the grace and class of this place.. You would think it should be the norm, but its not.. I am so appreciative.. This will be such a fun memory, laughing and eating way too much sugar late at night..
  25. Went there for dinner tonight at 8 ish.. There was a five minute wait for a table of four.. They were out of BBQ Baby Pig so we ordered the roast pork.. This is just so good.. Crispy salted skin, the meat was not dry and had a sweet soy/wine flavor..The skin had a great crunch to it.. Next, came egg rolls which are not pictured.. Actually they were duck rolls.. Please get them when you go there.. They are really good with the red vinegar also.. After the duck rolls came salt baked shrimp.. We asked for a side of ginger scallion sauce.. It also comes with the poached chicken but we think it goes very well with the shrimp.. Poached chicken with ginger scallion sauce.. This is a white sauce with ginger scallion as opposed to the ginger scallion in oil sauce we ordered with the shrimp .. A simple poached chicken breast..Really nice dish.. We had also ordered snails in XO Sauce, but they were out this evening.. Finally this dish was for the little one.. Its your basic pan fried noodle.. As good as you would have it anywhere.. The place is solid and not too expensive.. The roast or barbecued pork and duck are amazing.. The spareribs as well.. The duck rolls are worth the trip alone.. All the food with 4 beers was 65 bucks.. But thats the thing about Chinese Food or Family style for that matter.. Whether its three or six of you the price is going to be basically the same.. Its right on the Bowery, I parked in a lot outside and walked half a block to the restaurant.. For dessert we went to Blau Gans down on Duane St.. A couple of coups and I am too full to move..
