    Side Dish and Dessert

    Side dish de tutti side dish.. Take oyster crackers and crumble on the bottom of a dish.. Then layer with oysters, butter, white pepper and cayenne, then crackers then oysters.. All the way up.. Then pour cream on top. About a half cup every three inches.Nutmeg cause its Thanksgiving. Bake, then Recognize..

    One more thing.. I was just thinking.. Could you smoke tomatoes, garlic and onions maybe with some cumin or a rub and blend them.. Then inject the sauce into your pork and then throw it into the oven... That might be really good...

    Had dinner here this evening.. The winter menu is in full affect.. They are making interesting food.. For dessert I had an espresso marscapone mousse, around the plate were sambuca aspic dollops, each with a little bean on top.. I started with a tartare of beef that was in between thick layers of parm crisps.. On top was a fried quail egg and a sliced truffle.. This was lovely.. My girl ordered a cuttle fish in tomato sauce served over polenta.. For a pasta we split a cocoa gnocci served with a stewed wild boar.. Perfectly stewed strands of boar in a rich stock, with cocoa gnocci.. The gnocci was not half stepping here.. It was chewy, plentiful and held its chocolate taste.. We split the dish and we felt it could be easily split between four people.. Last thing we had before dessert: We got the pork loin.. Served with braised cabbage and fried cream!! Fried cream you ask! Make a custard cream with more flour then normal.. Freeze it, roll it in corn meal, and then fry it.. It reminded me of the fried mayo from WD-50, but a lot more dessertish..

    Wow Jasie, Thats a big piece of pork to smoke in that set up.. However, I fully back the effort..What might be a good thing to do is make a BBQ Sauce with smoked Onions and Tomatoes maybe use a couple smoked ham hocks.. This way there will be a smokey flavor to pour on top of the oven roasted Pork.
  8. Its interesting, its all in the phrasing.. If you said to someone do you like sweet potato casserole, it sounds a lot different then.. Do you like Butter, syrup, brown sugar, mashmallow,Bourbon and Sweet potatoes.. Oh you do, then combine all that and bake it.. Cause, there is nothing to be embarrassed about..

  13. Hey thanks Doc.. I appreciate the kind words. The seafood wasnt too impressive and I am thankful.. I dont know how it would have fit in the car... There was one good produce market there.. And wouldnt you guess it, the chef from APDC'S photo was in there.. I purchased a bunch of mushrooms there.. Purple guys, a big bag of dried morels, and a few other types I rarely see.. They also had some onion flowers and some really interesting baby vegetables, but it looked like they werent going to last too long.. In terms of the Mexican Food, it was just because we were in the area. I had just gotten a pretty fat speeding ticket so it was time to take a break from driving.. El Mariachi, not the best place on earth.. But we did think of you as we passed Saratoga..
  14. I see it, but I am still trying to believe it.. Miss Rachel D blogging, taking photos, and starting things off with a Corned beaf sandwich at a Deli... I am really such a fan of your writings and just of you! So I am really looking forward to following you this week.. Great grab and recovery on the cake by the way Edit to Add: I had a Mom-Mom and a Pop-Pop on one side and a Poppy and a Nana on the other..

  16. We arrived right shortly after they opened at 11 am yesterday morning.. I ordered the Roquefort Burger my girl the Cubano.. For some reason the Cuban Sandwich has a 15 minute prep time.. So while we waited for the sandwiches we decided to try the chicken liver toast.. This was as good a version as I have ever had.. Hot chicken liver on toasted bread with the olive oil pour at the end.. Just fantastic.. Burger was good to very good.. I like a char on my burger and am not sure it was grilled at a high enough temperature.. This almost had a baked and loafy feel to it.. However, the bun was toasted and buttered, and the Roquefort was just such a great cheese.. It went so well with the burger. Often times I dont think a restaurant takes the time to really research the blue they are using.. But, an important decision like this one was probably labored over by someone.. We also ordered a bloody mary and were really impressed with the pickled vegetables they served with it. You could tell that they pickle these vegetables in house.. The fries I have an issue with.. I dont think these littly wimpy strands stand up to a burger of that proportion.. It might go better with a fish dish that has a broth with it.. Where the fries wouldnt get soggy, but would be more managable on a fork.. The rosemary was a nice touch and added a lot of flavor.. The Cuban was a really porky,cheesy, pickle-E sandwich.. I mean whats not to love about this sandwich, Proscuitto, amazing Roast Pork, cornichons for the pickles, and the cheese was either a Gruyere or Fontina i think.. This was a very good sandwich.. I still dont understand why people need to call any sandwich with pork and pickles a Cuban Sandwich.. Whatever it is, its a fine pork sandwich.. I am looking forward to trying dinner here..

    Prune

    We got up this morning naturally at 9 o'clock..Living on the UWS, you need to be out of the house by 9:15 in order to get a seat at Prune for breakfast.. By 9:15 we were in my card heading down west end avenue.. By 9:45 we were parked and number 19 and 20 on the line waiting for Prune to open at 10.. Before the Bloody Mary arrives, I took advantage of the fact they have a bowl filled with complimentary alka seltzer on the bar.. The first of several different $9 dollar bloody Mary options we ordered.. All of them come with a shot of Red Stripe beer on the side.. This one came with a ball of wasabi and some beef jerky.. Fried Scones: Fried oyster "omelet" The sauce at 11 o clock is a combination of confectioner sugar and hot sauce..I put the omelet in quotes because the fried oysters were not mixed into the egg.. The egg was just cooked in a pan and then folded over fried oysters.. On top they served a tarter sauce.. House made lamb sausage served on the side.. Bite: Here is plate I just ordered things of the sides part of the menu... Two eggs with a side of chickpea tomato stew.. The strongest flavor was definitely cumin.. Also a shredded potato pancake, Pullman toast and more lamb sausage..

  23. I think they only do if you punch them out. Your kind of place, rich. ← I'm there tonight with brass knuckles. Speaking of Gallaghers (sorry to hijack this - but only for a moment). Friends went last night and called it the worst steak experience ever - and this from people who like the place and eat there regularly. Meat was tough and grizzled, crab cocktail was mushy and served over ice so it kept falling into cold water. They were so angry that I heard about this at 5:45 this morning. PS - they said my picture was on the wall with a large red "X" through it - never been "walled" before. ← Not really! My cousin who is a bouncer there told me he felt bad about the incident and he wants to buy you a crab cocktail.
