  1. My Father made stinky cheese i.e. blue and fried bologna sandwiches . I later made them grilled which were even better.
  2. Huh? Say it again, slowly, please. ← Using legs means that dust & crap can get underneath your cabinets ... getting a broom in there can be a pain. Re: the ladder-box - If you look back at the picture I posted, imagine the shorter cross pieces are sitting 3/4" off the ground but still flush at the top (i.e. the pieces around the perimeter are 3/4" longer). This is done to allow for scribe - shaving of part of the bottom edge of the outer frame in this case, which will allow you to make the ladder box nice & level. You'd shave off the bottom edge of the ladder box in places where it sits high on the floor. This is definitely a time when a picture would be worth 100 words, and a carpenter would be worth a picture or two! A. ← You level the base and then put the cabinets on top. Commercial cabinets are made in 2 pieces. The base that gets leveled and the cabinets that go on top. Otherwise you go crazy with 26 foot runs of cabinets. Questions can be PM, e mail or posted. Bruce
  3. ... or you could buy some legs. A. ← And then clean under cabinets that are 3-4" off the ground. If you build a ladder box run the intermediate pieces long ways and keep them 3/4"off the ground that way you only trim the perimeter to make it level. That's the way us professionals do it.

    Deep Fried Turkey

Heritage birds tend to have less breast meat. I cooked one last year in the convection oven after brining for 24 hours. It was wonderful, but I'd be careful of the thinner breast.
  5. Though my inital reply was in jest you might want to look into the Niteclub venue. Good food dancing and music. You could set the menu, do the books and play in the band. Don't know were you are but it might work. Sorry, I see you are in San Diego, Still it might work. I was thinking more midwest, east from my far distant youth.
  6. Own your own Restaurant where you can play in the kitchen, run the Business and play your horn for the patrons.

    Cruising with wine

Get some of the wine shipping cases that hold a whole case in styrofoam. I have one in my motorhome that holds wine just fine even if it's 90 out.

I once had lunch with Joe Namath at that restaurant that was associated with mobsters in the early 1970's. My boss had played for the other high school as a quarterback. That was before the pantyhouse.
