Well I'm thinking of almsot 10 years ago, in Queens. Some were from Bangladesh, some were from various parts of India. Actually to be honest - the Bangladeshis were more likely to be busboys.

dude - that just dredged up a memory of a business-trip applebee's adventure in schenectady new york. i had ordered fajitas and umm...it came topped with stewed tomatoes. i was so very confused.

why can't "i have it my way" like at burger king? i've gone in several times, and wanted this thing or that thing left out of my order, and i'm always told, sorry ma'am - it comes all shrink-wrapped and ready to go, we can't seperate out that stuff. seriosuly, do they even have line-cooks there? or just waitrons and microwaves?

pan - i'd have to disagree with the Indian taxi-driver statment. Lots of busboys, waiters and line cooks too. (at least in the NY restos i worked in.)

lots of applications for mashed too. maybe fried pies or turnovers. (i'm getitng this hazy memory of sweet plantain turnovers at Patty King on Elmont Road on Long Island)

Prema - Thanks for your points on freezer foods too. Seriously I have been thinking about the delivery concept for a while now, just out of my own needs, but what these needs boild down to is convenience factor. Especially in the US everyone is so busy - that it's much easier to go the fast food route than it is the sit-down dinner one. I agree with both you and the good doctor in that these avenues are being under-utilized. I'm puzzled as to why, tho.

yeah - i use a little oil in my puri dough sometimes. hmm...i'll have to start experimenting. Monica thanks! I had the paper towels, I missed the sprinkle with water bit. I'll try it this evening.

Thank you Prema! And welcome to the forums. I definitely agree - I like medium grain for curries, sambhars and the like, Basmati to me is too dry, and works better for biryanis and pilau type applications.

I'm on a japanese medium grain kick now. being south indian the sort of glutinous texture reminds me of rice i've eaten there.

pretty much the same as in you freeze them raw, or you freeze them cooked? and yeah - i can see samosas blistering - it is because the moisture crystallize, i'm guessing and then boils off when you friy them.question for those of you who cook and then reheat breads in the micro - don't they get tough? i reheated parathas in the micro last night, for about 45 seocnds, but by the time i got to the end of my meal the paratha was rock hard.

quick question? since chapatis and puris come from essentially the same dough - could I prep some doguh, roll it out, layer with wax paper, freeze and then as i wanted/needed - fry or put on a griddle as I wish?

Um, an aureole is the big gold shiny halo thing around saints' heads in medieval pictures. You're thinking of an areola. exactly. "aureole" and "areola" are way too close for comfort.

weaning problems tryska? *lol* it really is the strangest name for a restaurant. besides the obvious nipple reference, doesn't aureole also refer to your ear-hole? which arguably doens't seem like a good choice for a restaurant name either. ETA - the earhole area is actually called an auricle.

the reggae and ska shows at wetlands were awesome. soul kitchen used to be an interesting scene too. all sorts of up and coming hip-hop people looking for samples.

cadbury creme eggs, veggie tempura (eggplant, sweet potato, zucchini), and definitely dill pickle chips. maybe green tomatoes too?
