Does anyone have experience baking with Xylitol?

I have a customer with serious health issues and can only consume baked goods with xylitol (no other sugar subltitute). I've been able to convert some of my recipes to use xylitol, but my efforts are experimental, at best.

Does anyone have experience with xylitol and can provide me with some info on how to substitute it in my recipes? Does anyone have GOOD recipes that use xylitol?
