ISO: Caul Fat in NYC

Recommended Posts

Usually the caul fat is sold frozen. I defrost it in lukewarm water with a drop of vinegar.

I've purchased it at the Esposito's in Carroll Gardens, Brooklyn. It's not out for display, but they'll sell you some of theirs. It isn't frozen.

My name's Emma Feigenbaum.
