Sour salt

Well, it's not really salt so doesn't involve crystals. It's extracted from dried citrus. I've only seen it granulated.

Thanks for your reply. It came in crystal form in the past.  In fact, that is how I used to buy it, but it has been years since I bought any and now I can only find it granulated.

herwol, that's really interesting. Were they actual crystals or lumps?

They are crystals and are in a variety of sizes within the jar.  Mine are so old now that they have become cloudy.  They were distributed by Streits and Rokeach and the label said "Sour Salt (citric acid)".

Very cool. I've found most "sour salt" to just be ascorbic acid. I'll keep an eye out and post if I ever find anything.

Have you done a search for Streits and Rokeach?

Good luck.

Sour salt can refer to citric or ascorbic acid, but I think it's more often citric these days.  If you see lysergic acid labeled as sour salt, well, do let us know.

I've only seen it granulated, too, usually at natural foods stores.
