Went out to my parents' place yesterday, and took a couple of whole chickens along and smoked them. I need some ideas on what to do with them? I've cut one up and gotten the meat off the bones, the other one is still whole. I'm making chicken & biscuits tonight, and maybe a chicken & dumplings this weekend. That takes care of one. What to do with the other one? Any ideas?

Make a pot pie. If you have some chicken/duck/goose/whatever fat sitting around use it to sautee some veggies in a cast iron pan, put them aside and make a milk gravy, add the veggies and the chicken back to the pan and bring it up to a simmer. Make some corn bread batter and spread it evenly over the top of stuff in the pan. Stick it in the oven for half an hour - 45min and bake it until the corn bread is golden on top.

That was a good move. When I am smoking something I always smoke some breasts and thighs while I am at it. I take the meat off the bones and freeze it in foil packets. The bones go into dynamite chicken and dumplings. I use the meat in quesadillas, or rolled up in a tortilla with things like guacamole, onion sprinkled with lime juice S&P, cheese, any other stuff I have around. A dinner salad with the smoked chicken meat is wonderful. I also use it to make a white pasta sauce. Smoked chicken pizza is yummy. Oh... I could go on. Smoked chicken in "the pantry" is like gold for quick meals.

Make a sanwhich with the breast meat..With some good smokey cheese and crisp bacon....Maybe on some sourdough or some soft herb bread...you could make some good soup to go with it...Or maybe put some on top of a cool salad with some apple peices and crumbled stilton.....

Moo, Cluck, Oink.....they all taste good!

Smoked chicken is fantastic in enchilladas and quesadillas. Also make sure to make stock out of the carcus and reserve the smoked chicken fat for the next chickens you smoke. That way you can have a smoked gravy to go along. It's pimp. Or you could use the stock and chicken in a gumbo along with some fresh shrimp or crawfish. That too is pimp.

smoked chicken "enchiladas" are good...make them in corn crepes...mmmmm...

use the bones to make a good, dynamic stock.... some of that smoke always makes it into the stock....not overwhelming...just right....

Thanks everyone! I'm definately going to make stock out of the bones, and make enchiladas ( had those planned for Friday anyway, was just going to do cheese ones tho.) and maybe some salad, if I can get Mike to eat it with a real dressing, not bottled Thousand or French.
