Last night some Heartland eGluttons had dinner at a Vietnamese restaurant. We ordered a salad called Bo Tai Chanh, sliced beef and onion salad tossed w/lime juice, basil and topped w/crushed peanuts . The beef was white, it looked just like chicken. There was no breading or batter on the beef.

What caused this? Any ideas?

Beef from paler cut of meat (girillo etc), beef marinated with limes juice, loose some blood, lime juice denatures proteins in beef, so it looks paler.

Beef also could have been soak to remove blood so that people wouldn't freak about eating 'raw' beef.

Beef was actually chicken.

I think Adam might be right about it being bleached by lime etc.
