Donkey is also very much used nose to tail. In addition to the above, my local vendor also carries donkey brains, tripe, bones, hooves, skin, and intestines. All sold seperately.

I collected my half-pig this week, and they sent along some of the organs:  heart; liver; kidney; and the tongue (which I realize is not an organ).

 

I'm fixin' to grow, y'all!!

One of the reasons I love living in this strange land is that ordering a whole pig's head for delivery within 30 minutes is perfectly normal. That's said I've never done so. But I love knowing I could.

 

For ¥198 ($23.77 USD) this could be moving in with me shortly.

Although I've eaten every part of those heads with delight, I buy the parts individually as I simply don't have the space to invite them all to stay en masse. My heads move in in instalments.

Related to this the Observer has an article today on "St John: 30 ways the ‘nose to tail’ restaurant changed the way we eat".  This is to mark the 30th anniversary of Fergus "Nose to Tail" Henderson's opening St. John restaurant in London. Interesting read.

 

Includes a passing mention of eGullet.

I'm absolutely loving reading through this thread @liuzhou. I'm a big fan of Fergus and St John. Thanks for putting it together.

 

There's also cooking en vessie, where (usually) a chicken is poached inside a pig's bladder- which is later discarded because it's basically rubber

I've never seen or really thought of donkey as being a meat source and, after five Shrek movies, those captions make it sound like Donkey cooked the dishes 😄 (in my head anyway)

I recently tried 'chicharron preparado' -  not a crispy fried chicharron (pig skin) with toppings but a wheat cracker with slightly chewy but tender pieces of skin in the pile on top.  The skin didn't seem particularly pickled like the recipes I found suggest, but maybe the lime juice and hot sauce hid that.  More just a textural element with a very faintly porky flavor when eaten on its own.   Overall reminded me of ceviche, with lime, tajin, hot sauce, salty cheese, cucumber, lettuce, & avocado.  Mayo was offered and declined.  I enjoyed it.
