I tried several things. Using Sour patches as sugar in a simple syrup was not very successful but you can melt three sour patches in a microwave oven for 25 seconds and they behave as caramel and you can pull them out into long strings.

The successful recipe was to let 10 green sour patches soak in 4oz of apple juice for 18 hours. Use the juice, about 40 grams. Add some of the sour powder from other sour patches to keep the sourness. I used the powder from 4 more sour patches. Use the light foam recipe from 4-278. I used versawhip (1%) and Xanthan gum (0.15%) and whiped it with a electricwhisk.

Turned out really well but did not retain the green color of the sour patches.
