Xylitol Hard Candy

3 posts in this topic

I'm interesting in trying to make hard (sugarless) candies from xylitol. What I have found about it on the web says it is difficult to do. If any of you have tried it with success, can you please share the technique? Thanks!

That is very interesting, I never thought of boiling xylitol. Do you have access to large amounts of it? I know that stuffs expensive, at least it was the last time I bought it. If you have some to spare and okay around with, try boiling a cup of it with maybe 2oz water and see what the result is. All I do know is that, when I've seen sugarless hard candies (I forget what brand they were) they were made with isomalt, so that too, perhaps, can be another avenue for you.

I haven't tried making candy with it, but I can't imagine it would be much different than with regular sugar. I did try a syrup with it, 3:1, and it precipitated out a large crystal in the jelly jar I put it into.
