Hi,

I was given a few necks by a friend and he told me to just cook it Osso Bucco style. Searched the net and all the recipes call for braising and dutch ovens.

Are there other methods that maybe you've tried? Can I grill them? Pan fry? Bake?

If pork necks are similar then I can offer my favorite prep. I rub with a spiced garlic paste and cook on the Weber kettle grill off to the side of the heat until very tender. This takes several hours. I also bake them but prefer the kettle.

Adria slow roasts them under foil in his new book. Guess you could try something like that--he sticks with garlic and rosemary but you could do whatever you wanted. Some Indian spices, maybe. Oregano amd garlic. He splits them lengthways first.
