  1. I'm still becoming accustomed to my Santoku but for certain kitchen tasks it excels. That and my Usuba have changed the way I look @ food preparation altogether.
  2. In the jurisdiction where I live cartridges are legally considered to be weapons. Glass wine bottles are not considered to be weapons and in fact are essential for civilised dining and discourse.

  5. OTOH-I take my own Bullion cubes with me wherever I travel. Too sensitive to the gross amount of MSG in so many brands.

In an authoritarian state like China when the sh*t hits the fan it really sprays I'm not at all surprised to hear that media people are 'under suspicion of such and such an offense'-IOW just for making the state look foolish. This reminds me of the old Russian joke about 3 convicts in a cell in Lubyanka-a notorious Moscow prison. First prisoner asks the second prisoner-"What are you here for"? He answers-"I spoke for Orlov-and you"? First prisoner-"I spoke against Orlov"! They look @ the third prisoner and he says "I'm Orlov"!

    Thanks for the info-too bad I can't find any here in Vancouver-my regular supplier told me the Winery was keeping it all to sell on site.
  8. It's a large farmed Tiger Prawn from SE Asia-at least the ones we see here are from SE Asia. 100% farmed product and rather bland/tasteless compared to local our product.
  9. Nuba on Seymour is finally opened-brand new everything. Not much more room for eating but a much bigger kitchen, Staff is friendly and efficient as always, food is great.
  10. Visited that shop earlier in the week and was quite impressed, bought one of the aforementioned bars-Plum Brandy IIRC. Not as rich as some-Chocolate itself had an off taste/mushroomy not at all appealing, the Plum Brandy filling was very tasty though.

  13. The Canadian Govt is always warning us about something-they are notorious worry warts/nannies and chicken littles . If it's good enough for Thais-who have a fabulous cuisine and are a healthy people- then it's good enough for everyone else I'm sure.
  14. Luhr Jensens are fine for light duty smoking-sooner or later the element or whatever gives up and replacement parts are quite expensive it's usually easier to just buy another.

  17. Benny's Bagels 2505 W Broadway has reopened after a kitchen fire knocked them out of the game for some months.
  18. Soak the filets in low fat milk for 24 hours changing the milk after the first twelve. Use a standard Tempura batter and the Pike will be sweet and firm. I see you're from Ottawa-I grew up north of North Bay where Pike are always sweet except in July/August-that's when we used the low fat milk trick.
  19. Carrying along in this general vein I have a question for all the talented and helpful individuals here. Sometimes I cure a Salmon fillet in 50/50 salt/sugar for 24 hrs before cooking it in a Stovetop Smoker. How long to leave the fillet in a Tea solution similar to that posted in the Shrimp recipe to then cook the same way? Note-these are regular sized Coho/Sockeye or Spring Salmon fillets not huge but not small either.

  21. Here in Beautiful British Columbia we're lucky to have a growing Swimming Scallop fishery. It's a bit of a different product from regular Pink Scallops and we eat the whole animal-it's fabulous. In fact one of the originators of the fishery is moored down @ nearby Fisherman's Wharf and I intend to stop down this weekend to stock up.
  22. The Ugandan product is for sale @ Granville Island Market, the Tongan product was bought on Vava'u but is widely found on the net.
  23. I've recently had Vanilla from the Tongan island of Vava'u-ambrosial product and not expensive-and have seen Vanilla from Uganda for a very decent price.

  25. Hven't seen the Rosenthel but Lee Valley has sturdy unit. Some kitchen knives/sharpeners worth checking out there too!
