  1. Yes I have had various machines in my life and my current one, a Zo, is out on loan. It was a thrift store find but I had to buy a paddle for it.
  2. Mortadella on toasted ciabbata with hot mustard and my usual black coffee.

    Dinner 2017 (Part 6)

Lazy dinner — thigh from a Costco rotisserie chicken and roasted buttercup squash.
  4. No worries — they offer a non-modernist recipe too.
  5. That must be some new kind of alchemy?
  6. They also handily provide a table to convert lower protein flours to bread flour using vital gluten.
  7. I was just given some passion berries from Ethiopia and some Timur pepper from Kathmandu. Fabulous.

That pork chop looks amazing and I do envy you the broccolini.
  9. Sheesh. At that price I’d be experimenting too.
  10. I think bread machines are one of the biggest bargains you can find in a thrift shop here. Just make sure the paddles are there and that the nonstick bowl is in good shape and you usually are getting away with very little money for a very good machine. Seems to be one of those machines that are either bought or gifted and quickly abandoned.
  11. If you are going to smash them then five minutes with a 10 minute release should do just fine. I would’ve preferred them with a little more bite in a salad.
  12. Toasted ciabatta with crumbled Danish blue.
  13. Everyone needs friends like I have. What a wonderful world that would be. The materialistic evidence is only the icing on the cake.
  14. Potato, egg and tomato salad (Hugh Fearnley-Whittingstall) mostly made in the Instant Pot. I cooked the small marble size potatoes and the large eggs together on low-pressure for five minutes with a 10 minute slow release. The potatoes were just a little overcooked. They were much smaller than those that I usually find in my grocery order. The ones that are twice or three times this size should work out just fine. This is a non-mayonnaise-based potato salad which I quite enjoyed.
  15. Sometimes, not often, it pays to be Canadian.
  16. Lots and lots of reading ahead and I hope lots of baking. Stay tuned for developments.
  17. My loot bag. All this and Kerry lugged my copy of Modernist Bread from her house to my house click. To say that my cup runneth over doesn’t come close to expressing how blessed I am.
  18. It’s here. It is here. Someone very kindly made a gift of it to me when it was first released and today it arrived at my house. Enjoy the unveiling.
  19. Tinned sardines in tomato sauce mashed with lemon juice and mayonnaise on toasted ciabatta.

I will raise you one Jamaican patty wrapped in a paper towel.
  21. Wow! Wishing every good thing for you and your staff.
  22. One can either live in an over-populated urban area with all its perks and its traffic congestion, air pollution, high crime rate and meal/food delivery services, or in places like Nunavut and compete with polar bears for your daily rations, or you can compromise and live in the vast remaining parts of both the USA and Canada and do without both the perks and the problems of the alternative.
  23. Life is good. Pickled herring, crispy shallots, George Jensen cutlery and Taffel Akvavit. I’ll be napping for a few hours.
