Hit up a nearby seafood shack for a Mahi sandwich and hush puppies. Excellent as usual. Always have to stop when in the area

Got home late so dinner was simple and involved leftovers. A leftover raw chopped vegetable salad with a few ounces of left over grilled salmon flaked in. Dinner for two. It was really quite good.

Elijah Craig barrel proof and a Cuban cigar lunch so far. Nice egg breakfast this morning. Dinner prep done. Grilled steelhead and chopped vegetable salad

Diamond is my go to for cooking and the table. Larger flakes are nice when you want a more assertive salt bite with texture like one might want in some desserts or on a nice cut of steak, raw tuna etc.

Bought a bunch of 12 and 5 yr Real McCoy rums from TW that they were moving out at a big discount. Lucky me. Foursquare rum marked down I guess it didn’t please the average rum palate, lucky me -

I live in central coastal Florida and have no problem turning on my oven. Kick up the AC for a short time if needed. I'm in a shorts and tee at home during many months and a little extra heat is easily tolerated. Guess I'm well acclimated

Smoked chicken thighs last night. Son and his girl friend and BIL over for dinner.

The only frozen ducks I see are Maple Leaf brand at the grocery store. Legs are no way as plump as the ones pictured above but I've done a couple legs thigh quarters SV for confit. Just not enough meat to justify doing it often

Sometimes I struggle with getting a great sear on scallops without the use of "enhanced browning powder". The line is too fine between a good sear and overdone and I'd rather avoid the latter
