Caldo verde on the stove. Waiting for wifiy to get home. Crusty bread to sop up the pot liquor sipping on on a private selection rum Clement. Helps entertain while waiting for her arrival. Getting her hair done....

Spent part of the morning at my moms condo donating furniture and anything else wanted to a church group. Got rid of some furniture. Still a lot left to donate. They have more people in need Picked up a chicken from the market and with some time on my hand (rainy day) decided to do a chicken ballotine for dinner. Had to watch and rewatch Jacques Pepin’s video to refresh my memory on technique. He makes it looks so easy. It’s not hard but there is a definite method to the madness

I usually buy a whole side of salmon. First thing I do is skin it if needed. Then the belly meat gets sliced off and set aside as well as the tail end. The now more uniform side is portioned in 4-6 oz cuts Belly will get used first most often. Due to the higher fat content it’s great for smoking

Never had an aversion to cottage cheese. Yes some store brands can have a mild bitter note to it. My my favorite way to enjoy it is to serve it with a good pour of fruity extra virgin olive oil and a grind of fresh ground black pepper

Had my fill of corned beef. Well at least for today. Stopped by the local fish monger this afternoon. Seared grouper with mixed green salad and cauliflower purée. Mahi Mahi tomorrow

Pretty much my method as well. I really like the steam finish I did find one in the freezer yesterday and it went in the smoker this morning. About a couple hours before pulling it from the smoker and steaming it. Pastrami sandwich for lunch. Just need to run out and pick up some decent bread

Searching my freezer for a corned beef. I’ve corned my own but the prepared ones are equally good. I want to put one on my smoker soon. Just sold my business, and dealing with the death of my cousins 30 yo son this past week and getting medical insurance for my wife and my 91 yo mother dying last month. I need some normalizing to keep me sane. Shiva for his boy this week. It’s been crazy. To much information I know but I needed to vent. Cooking helps to keep me sane, that all is good in this world.

Lightly fried broken yolk egg on a lightly toasted flour tortilla was a quick breakfast this morning i have have to be honest, as I scrolled through the photos I wasn’t sure I was on the right topic. Looked a lot like dinner

Spent the day with my wife walking the causeway and a place called honeymoon island in my town of Dunedin. Probably 12-14 miles. Small breakfast, no lunch, lots of water, so ready for dinner. Prepped 2 chickens when we got home, split them in half and seasoned them with a salt/sugar mix to rest overnight before hitting the smoker tomorrow. Cooking for my son, his girlfriend and my BIL. Then settled down to making dinner. Simple bagged Rana brand mushroom ravioli which was topped and mixed with butter sautéed sliced brown mushrooms, fresh thyme and a generous spill of 2014 Kosta Browne Sonoma Coast Pinot and side salad. The ravioli was delicious with that mushroom sauté.
