Beautiful. I love looking at what I have on hand and trying to make the best of it and manipulate it into something new. A bit of a mental challenge. Not that complex 😋. Just fun

Lunch was “sink” tacos. Toasted corn tortillas filled with leftover smoked chicken, tomatoes and pepper jack cheese and green tomatillo salsa. A quick snack before heading back to work. Busy in retirement. Good to be needed 😋. Got an upcoming wedding to pay for

Made corn chowder the other day. A blend of whole and puréed corn with chicken and corn stock as well as a bit of cream. Added some thin sliced lemongrass along with onion and garlic which really boosts the flavor and perfumes the dish a bit and really taste great

Just reading through this tread. Years ago one of my cousins had started a backyard garden and was growing Collards and Brussels sprouts . I gathered up all the larger leaves from the Brussels and some of the more tender leaves of the collards and made dolmas or as we called them cigars. Worked quite well

I did from my private practice. Sold it. Now do freelance work 2-4 days a week. No take home issues so it like vacation

Had the day off and after cutting the grass and dealing with estate issues I ended up at BJ’s and picked up two big lamb shanks. Braised meats really push my buttons 3 hrs in the oven while I relaxed by the pool seemed like the ticket. I had already cleaned the filter..... No starch served although several would have been appropriate. Side salad rounded out the meal A 2016 Kosta Browne Russian River Valley Pinot was the perfect compliment

Back home after a long weekend at the beach. Lunch yesterday from leftover salmon from the night before Watching Dorian with interest. Crazy it’s not moving but glad it’s not moving across the state to me. Saw this as the outer bands passed over us. Looked scary but just a bit of heavy rain Back home. Pan seared mahi and sea scallops with micro salad greens for dinner

Clean out the fridge dinner. Pulled chicken from a smoked bird cooked the other day. Toasted corn tortillas on the comal then layered a base of shredded cooked Brussels sprouts. Reduced green salsa with the chicken to warm it up then added it atop the Brussels then added shredded micro greens and called it a day. Actually quite tasty. Sometimes you get lucky
