Shishito peppers obviously before roasting
-
Had friends over the other night. Made fish cakes from steelhead and barramundi portions along with roasted vegetables and salad
-
@rotuts would never eat that rice. Yuck
-
yeah I’ve used instant rice but then you have to get the fine coffee covered rice powder out of the grinder. A good hard blow with an air compressor does a decent job
-
Me, never. Keep all my coffee equipment clean except the grinder doesn’t get a complete cleaning after each use but all old coffee is brushed away daily. Periodically I take that monster Mazzer Mini of mine outside and use an air compressor to blow out as much coffee as possible and brush between the “teeth” of the grinding plate and wash the hopper with soap and water

Bubbles could be coming from it’s reaction to biological enzymes from a biofilm

No question, if your grind is too fine the sludge factor goes up. I’m okay with some sludge, my wife hates it. So no French press for her. When she’s away I often brew with a French press or the Areopress. I like diversity

I was just ribbing you. There are so many ways to prepare coffee. Some are very anal about it. Auto Drip is my go to because it’s easy and works well on most days. The Bonavita has served me well. On days off with more time on my hands I play with the areopress, FR ch press or other methods but in the end it’s just a cup of joe and as long as the beans were roasted well it should be good

3 corned beefs were pulled from the smoker today. Coated in typical pastrami spices. Steamed to the finish
-
You seem to be over looking the obvious. As compared to drip, the coffee is totally immersed and you have more control of the extraction time and grind. There is no paper involved in the extraction leading to a cleaner cup flavor wise, if you don’t mind the sludge that often passes through the screen filter.

I just make sure there is enough fat in the meat I grind for burgers
-
Was in the mood for something warm and comforting even though it was in in low 80’s today corned beefs were on sale and while I usually pick them up and smoke’em to make pastrami, I made corned beef and cabbage tonight.

Heat gun roasting was my first intro into home roasting. After a while you get tired of holding the gun for 10+ min and stirring. I actually mounted the gun on a mike stand. from there moved onto the turbo oven/ stircarzy popcorn popper method. The heater disconnected from the stircrazy, Used that for years until just getting the Gene

I often remove the stem and ribs but snack on them while preparing dinner
-
Simple dinner. Dinning solo. Used a 6 oz burger to make two small sliders as I had two dinner rolls on the counter. A little tomato jam, pickle and gouda to top it off. Domestic single barreled rum to sip with dinner

yes I do. As you can see in the picture the exhaust is near the window fan. I recently added a flexible vent pipe from the exhaust to the front of the fan so it pipes right out and no smoke in the room. The room is our pool house that needs remodeling. It’s my place to hang, smoke cigars, roast coffee, sip my booze and play guitar, aka man cave

The only problem is the fan that pushes the heated air through the drum makes it difficult to hear the cracks. As it nears first crack in color I’m moving closer to the roaster to watch the color of the beans and wait for the crackling of second to stop the roast and dump into my bean cooler. I replace the drum and let the roaster run through its cooling cycle or at least 1/2 way before stopping it and reloading for the next roast. 2 full batches will fill a mason jar with a little bit leftover
-
You control the roast level and can stop the roast at any time. Even though the roaster can be programmed to go into the cool mode, I dump mine into a colander on top of a down draft cooling fan which rapidly cools the roast. I try to push through first crack and into the beginning of 2nd crack before stopping and dumping into my cooling unit.

I have a Cafe Gene and like it. Had previously been roasting with a turbo oven and stir crazy popcorn base with the heater disconnected to allow the stir crazy to just keep the beans moving under the turbo oven. The Gene is still hot air roasting but it allows you to set temp and roasting time and has a chaff collector as well. Very even roasts

Love those beet greens Margaret
