  3. I now have both, Anova and Joule. Bought Joule because I needed an extra sous vide for our beach house. Agree with @Anna N that starting with hot water (or even using tea kettle) makes water heating power mostly irrelevant. To me small size of Joule is important since we like to rent apartments or houses when we travel and I bring a few kitchen gadgets with me. Joule can easily fit into that care package.

  8. @David Ross I slow roast duck similar to your preparation and it is great! Using fork to puncture skin all over. Here Is a picture of one. Family started to eat skin before I managed to take photo. And you get tons of duck fat as a bonus.

    Okanagancook, thank you. My oven does not go beyond 450 degrees and that what I use to roast chicken in a pre heated cast iron pan. Air drying the bird when I have time prior to roasting. Beets are cooked in Cuisinart steam oven.

  14. Came back home and started playing with Joule. Downloaded the app, no problems. It offered me to re-name Joule. Now her name is Mashwa, after an exotic root vegetable that I ate in Peru. Side by side comparison with Anova. Real strong magnet made using clip unnecessary in Le Creuset pot. Made lamb leg overnight, it worked like a champ and I could check the cooking temp on iPad without getting out of bed (although I did not).
  15. A bottle of Peruvian Savignin Blanc that we had the night before we left. I have very pedestrian taste for wine, never met Sav Blanc that I did not like. Coming back home yesterday. Welcome drink on the first flight. Welcome drink on the second flight. Connecting in San Salvador. There were 19 passengers bringing roasted chicken home, apparently it is the thing to do.

    It makes me very happy that my son loves to cook. I can even share my kitchen cooking side by side with him when he visits. It does not hurt that we share a glass of wine as we cook!
  20. I bought LUX60 instant pot. Can't beat the price. I never use 1/2 pressure and make yogurt in mason jars in sous vide bath.
  21. All this traveling and gourmet eating marathon made me crave few simple dishes. Salad with baby lettuces and an olive oil and lemon juice dressing. Mashed potatoes. Flash seared fish fillet. Parmesan cheese with a glass of wine. Those thoughts make it easier to go home where I cook excessively and dream of the next gourmet getaway (but not too soon).
  22. One more photo: the chef and I (and the largest sole I have ever seen).
  23. Lunch at Chez Wong where you get arguably the freshest sole ceviche and stir fry. No arguing that sole was super fresh, he was cutting it right in front of us. Ceviche was delicious. Stir fry was a little greasy. The price was too high IMHO, about 80 dollars for two people with three beers. The restaurant was on Bourdain show.

  25. Our last day in Lima. Going home tomorrow. Wish we could stay longer. Bacon and cheese sandwich for breakfast, it was cooked kinda like French toast.
