Rockfish so fresh it did not even smell like the sea. Love Maryland fish! Roasted carrots, mostly the purple ones from Trader Joe.

I have fat bank in the fridge too! All fatty trimmings are rendered and fat accumulated on top of stocks is added as well. I can not remember the last time that I cooked with anything other than that fat. Perhaps when non pork eaters are visiting...

God blessed me with son who will eat anything! Not your every day hash. It is made with tripe and Lao Gan Ma. Tripe was cooked in Instant Pot, posted on that thread.

Dear husband is out of town and I can eat awful offal if I want to. And I do tripe cooked twice. First time just brought to pressure with water and a bit of vinegar, rinsed, cooked again with stock for 45 minutes high pressure. It was cut in large pieces prior to cooking. In the photo it is cut into smaller pieces to be added to fried rice. Pleasantly chewy texture.

Whole Foods in Virginia has 12 days of cheese starting yesterday. Every day one cheese is 1/2 price. Today it is Epoisses. Don't know if this sale is country wide.

Breakfast for my son who is on a project in Washington DC and staying with me this week. Smoked salmon sandwich, double espresso with cream, freshly squeezed orange/apple juice.

Left over roasted chicken with home fries. I love to have leftovers for breakfast. Morning sun creates long shadows that make it difficult to take photo but make for a very beautiful view!

I usually start with the fridge. Can't figure it out but I always have leftovers and things waiting to be cooked. To quote Calvin Trillin: “The most remarkable thing about my mother is that for thirty years she served the family nothing but leftovers. The original meal has never been found.” No matter how hard I try to buy only what is needed for today's meal, there are always other things that manage to sneak into my shopping cart. Bargains, rarely available items, particularly marbled piece of meat. There are also leftovers from the meals that are intermittently delivered to the office. I can not let those die in vain. For example, tomorrow we are going to have white chili made with left over pieces of roasted chicken. But today I am going to a business dinner and will have left overs for sure, so those will have to be re purposed on Thursday. And I soaked way to many beans for the chili so there will be bean salad on Friday. I would really like to buy a piece of fish to cook but I already have things! Need intervention, please help.

Chefsteps has a tutorial on making prime rib sous vide. It made me insanely hungry just looking at it. One thing I did not understand, they separate ribs from the meat, then tie it all back together, only serving the meat later. Left over chicken reheated in Cuisi steam oven. Sautéed carrots, Napa cabbage, beets on the side. We love beets!
