Yesterday, I roasted a whole chicken for the first time in I don't remember how long. It was delicious! Tonight I took the leftover meat off the bone and reheated some of it in gravy and served it with buttered green peas. So tasty! I still have enough meat to slice for sandwiches and for making chicken salad. It was a big chicken!

Something a little different for a late breakfast this morning! I had these beautiful mushrooms, some leftover meat sauce with hot Italian sausage, black olives and cheese, so I made pizza for breakfast.

No photo here either. Two slices of thick applewood smoked bacon this morning.

Beef Chili with Beans, topped with shredded cheese and chopped green onions. Great on a chilly evening!

Simple Crusty Artisan Bread: Baked in a dutch oven on parchment paper. Cooling. Sliced and ready to dip in herbed olive oil.

Dough for Simple Crusty Artisan Bread. Will use half of the dough to bake up a loaf tomorrow and save the rest for another loaf later in the week.

And for our final holiday weekend dinner: Grilled Chicken Thigh, Cole Slaw and Buttered Corn On The Cob.

My 4th of July Independence Day meal: Grilled lobster tail, served with melted garlic butter. DH had a grilled ribeye and baked potato. And last night, we each had a grilled hamburger on a toasted onion roll.

Dinner last night: Chicken "Cabo" Salad - From left to right: Chopped Black Olives, Hard Cooked Egg, Chicken Fajita Meat and Tomatoes, Shredded Cheeses, Crumbled Bacon and Diced Avocado over a bed of Chopped Romaine. Served with Ranch Dressing on the side.

My DH and I just returned home from our visit to New Orleans. We checked into our hotel Tuesday evening and walked over to Mr. B's Bistro (201 Royal St.) for dinner. We shared the Pork Belly appetizer (sorry, forgot to take photo until after we had started to eat). I had the Grilled Redfish and my DH had the Fillet Mignon (photo too blurry). On Wednesday, we had lunch at The Gumbo Shop (630 St. Peter St.) I had a cup of Crawfish Etouffee (pictured above), while my DH had a cup of Chicken and Andouille Gumbo. That night we had dinner at Pere Antoine (corner of Royal St. and St. Ann) I had their Fried Shrimp and my DH had the Red Beans and Rice with Sausage. On Thursday morning, we ventured out for breakfast to The Ruby Slipper Cafe (200 Magazine St.) While my DH opted for the Spanish Omlet, I had Two Eggs Scrambled and Bacon. And for our final New Orleans meal, we took ourselves over to The Market Cafe on Decatur to eat, drink and people watch while we listened to the live jazz band. My DH had the Gyro Pita, and I went for fried shrimp again, and had the Fried Gulf Shrimp Platter. We had a wonderful time in New Orleans and plan to return soon. Thanks for all the suggestions. My DH had requested this bread again, so I mixed up the dough last week and finally baked it yesterday. Sliced and served with an olive oil dipping sauce containing a touch of lemon juice, fresh basil, parsley and rosemary, garlic, red pepper flakes, dried oregano and thyme, kosher salt, and lots of fresh ground black pepper. -

Scrambled Eggs with Shredded Cheese, 1/2 Hash Brown Patty*, and Applewood Smoked Bacon * DH had the other half of the hash brown patty with his eggs and bacon wrapped in a tortilla.
