That looks really good! Could the eggs be added later, say half-way through the cooking time?

Grilled Chicken Wings! The wing segments were cajun seasoned and served with ranch dressing. I had my wings "naked", but my other half likes them spicy and had his tossed in melted butter and tabasco sauce.

Cocktail/tiny size Croissant with Turkey and Mayo. Just the right amount for lunch on a hot and steamy, summer day! Cold chunks of watermelon were also on the menu.

We had tacos last night, too, but I had mine in a bowl. Crushed corn tortilla chips and shredded pepper jack cheese went in the bowl first, followed by the taco meat with homemade taco sauce, avocado salsa, and more shredded cheese.

One of my lady friends and I got together at Cheddar's in Webster for lunch earlier this week. I had the grilled tilapia with shrimp and mango salsa (served on a rice pilaf), and my lady friend had the batter fried shrimp with carrots and broccoli cheese casserole.

A couple of recent breakfasts: One fancy and one not so fancy. Both good! Poached Egg on Crabcake with Hollandaise Sauce and Country Potatoes for brunch at Sunflower Cafe in Galveston. Peanut butter toast with butter. I love the small pats of unmelted butter under the peanut butter!

A couple of recent lunches: A cup of clam chowder at a Galveston seafood restaurant for a meal with family. Double meat cheeseburger on a toasted bun with mayo, mustard and red onion.

We have our son and his family visiting with us from Japan this year, so we will be doing our traditional cook-out of burgers and hot dogs with potato salad, corn on the cob, pork and beans, and watermelon. Sparklers and snakes to follow!

My husband had been wanting to go out for Indian food, but with his busy work schedule, we just hadn't found the opportunity, so I did a search and found a recipe for Indian-Spiced Chicken on bonappetit.com. The recipe made a large amount of sauce, so I added some carrots along with the potatoes. I served it with store bought garlic naan. Happy husband!
