    Sorry, I can not answer how they made the determination, but apparently there is no commercial market for eggs with multiple yolks. I just accepted the eggs and said thank you.

    A friend recently gifted us with a dozen double yolk chicken eggs. Fried sunny side up and served with applewood smoked bacon. Forgot to take the money shot. Sorry. But the yolks were deliciously runny.
  4. Hi Patrick, thank you for asking. This recipe is easy to make and one of our comfort foods. Leftovers will be for dinner tonight! Chicken Pot Pie 1 Tbs peanut oil 1/4 cup celery, chopped 1/4 cup white onion, chopped 1 can Veg-All (15 oz), drained 2 cups cooked chicken, dark and white meat, diced 2 cans Campbell's cream of potato soup (10 3/4 oz) 1/2 cup heavy cream, half and half, or milk 1/2 tsp fresh ground black pepper 2 Pillsbury refrigerated pie crusts, at room temperature Heat oil in a sauce pan over medium heat. When oil is hot, add celery and onion and cook until tender. Stir in the next five ingredients and heat through. Unroll the pie crusts. Lay one crust in a 9 inch pie plate and use a sharp knife to trim edges to rim of plate. Add the filling and top with second crust, fold the edges under and press with the tines of a fork to seal. Make several slits in the top of the crust. Preheat oven to 425 F. Bake the pie on a cookie sheet (to catch any drips) for 35 to 40 minutes (adding a foil collar to the pie half-way through baking to keep the edges of the crust from getting too brown). Allow the pie to cool for 5 minutes or so before slicing.

  6. Last week my GF and I finally got together for lunch again. This time, we drove down to Galveston and had our meal at Rudy and Paco Restaurant and Bar. I had the Gulf snapper tacos, grilled, which came with a cup of tortilla soup. And my GF had the Crabmeat Pasta, angel-hair pasta tossed with lemon butter caper sauce and Jumbo Lump Crabmeat.

    Duck was on our menu for Christmas dinner, too! The duck breast was pan-seared and served with a black cherry sauce, potato latke, and steamed asparagus.
  8. Just the two of us this year, so keeping the menu simple: pan-seared duck breast, sweet potato mash and asparagus. Pre-dinner snacks will include deviled eggs, cream cheese stuffed celery sticks and a black bean and corn salsa with tortilla chips.

    Hi Bruce. Today's variation was made with bone-in, skin on chicken thighs, bacon fat, chopped onion, garlic, and celery, roasted red bell pepper, canned whole tomatoes with their juice, orange juice, curry powder, cumin seeds, dried thyme, and cayenne. ETA: roasted red bell pepper

    Tonight we made dinner on the grill: I grilled Cajun Spiced Chicken Wing Sections and DH had his tossed in Sriracha and Butter with Ranch Dressing on the side for dipping. I had mine naked!

    Everyone's meals look so great, but oh man, I really want some of those tamales, ScottyBoy! RRO and DCARCH - thanks for the comments on my duck breast. We will be doing it again soon. Some recent dinners: Pork Steak smothered with onions and garlic in a red chile sauce and steamed Cauliflower Pan-seared Lamb Chops and Spiced Potatoes and Onions

    Turkey Leftovers

  19. My DH and I had a good Thanksgiving. Snacks around one o'clock were celery sticks stuffed with cream cheese and sprinkled with seasoned salt, a bowl of ripe black olives and these deviled eggs. For dinner we had roasted turkey thighs, herbed bread dressing, mashed potatoes, gravy, buttered carrots, and homemade dinner rolls. After dinner we shared some wine and relaxed in the hot tub!
  20. Actually, mashed potatoes are more traditional in our family but DH has approved roasted veg for this year. ;-) And I'm roasting them (potato, sweet potato, onion, carrot, and garlic) with duck fat.
  21. My DH likes traditional foods for T-Day! One year, long ago, I made a turkey with tons of garlic under the skin, which he and my son told me was okay but not what they wanted for this holiday. So, since it is just the two of us this year, we will be having roasted turkey thighs, roasted root vegetables, herbed bread dressing, gravy, home-made dinner rolls, and deviled eggs.

  23. Hi all! This week my GF had a craving for steamed clams, so we returned to Little Daddy's Gumbo Bar in League City for our lunch. The clams are steamed in a white wine and herb butter broth and come with crusty garlic bread for dipping. I decided to try the Greek Salad, had it topped with Grilled Chicken, and really enjoyed it.
