  5. All these lovely fried eggs called to me, so this morning I had an over easy egg on leftovers from last night's dinner, stacked pork enchiladas and refried beans.

    Club-style Sandwiches for dinner tonight! Rotisserie Chicken Breast, Applewood Smoked Bacon, Romaine and Roma Tomato on Toasted Whole Wheat with Mayo
  9. Time to do catch-up again! While my GF and I were having lunch today, she commented that I hadn't been keeping this topic current on our lunches. ;-) Way back in August, when we were down in Galveston, we decided to give the recently opened Be Quay Vietnamese Sandwich Shop a try. We both ordered the B4 Roasted Pork, but I forgot to take the photo until after we had started eating. The bread they use is awesome! Light and crisp on the outside and soft and moist on the inside. My GF bought a couple extra loaves to take home! At the end of August, just before my GF left for her Alaskan cruise, we had lunch at the newly opened Panera Bread in League City, and used one of the coupons we had received in the mail for their two for two special - buy one lunch menu soup, salad, or sandwich combo and get the second one free. I had their Chopped Chicken Cobb with Avocado (sorry, photo was too blurry to post) and their Broccoli Cheddar Soup. I thought I was only going to eat the salad, so ordered the soup to go, but ended up eating it anyway, thus the to-go container. GF had their Classic Salad, Frontega Chicken on Focaccia, and cut Apple. I again forgot to take the photo until after we had started to eat. In September, after she got back from her trip to Alaska, we returned to Panera to use our other coupon - same deal. This time I had their Thai Chopped Chicken Salad and French Onion Soup. The meal came with a choice of chips or apple, and I had the chips. I'll order that salad again! My GF had their Classic Salad with a Roasted Turkey and Avocado BLT on Sourdough, and an Apple. And now we are up to today, where we returned to Floyd's Cajun Seafood in Webster. My GF had the 1/2 and 1/2 Combo of Fried Shrimp and Oysters with a loaded baked potato. (Sorry, photo was too blurry to post.) And I had one of my favorites, their Crawfish Etouffee with a side salad (not pictured).

Breakfast today: Sliced Hard-Cooked Egg, Lightly Salted Avocado, Laughing Cow Creamy Swiss, and Wasa Sesame Flatbread I cooked the egg using Alton Brown's steaming method - the yolk was very moist and creamy. The laughing cow cheese worked as a nice sub for the cream cheese I would normally have selected.

    So many delicious looking meals from everyone! Inspired by Franci's carrots, I made a Peas and Carrot dish based on a Jacque Pepin recipe I found on foodandwine.com. I paired it with a Pan Fried Tilapia fillet, topped with sauteed mushrooms, browned butter and chopped parsley.

    Thank you! The house smelled amazing! I cook them to 170 - 175 degrees. The meat is cooked through and the skin is so crispy. And you saw correctly, I use rosemary, thyme, sage, black pepper and kosher salt to season the thighs after I rub them with either olive oil or butter. Last night I used olive oil. I am lucky that my grocery carries the cut up portions, much like chicken. Tonight we will be going a bit lighter and having the second thigh with a salad.

    rotuts, I pan roast the thighs at 350 degrees F for about an hour and a half, basting occasionally.

    Fall is finally in the air! A cold front came through last night and we woke up to 65 degrees this morning! We had one of my favorite fall meals for dinner tonight: Roasted Turkey Thigh, Mashed Potatoes, Gravy and Green Peas

    :-) I should have positioned the ribs at a better angle for the photo. I had cut the slab into 3-rib sections prior to baking so that it would fit in my roasting pan.

    Lunch! (2003-2012)

    Really more like brunch. I started out wanting some bacon for breakfast and thought I might have some fried eggs with it. But then I remembered I had some tomatoes that would make a great sandwich with the bacon. Then I remembered I had some avocados, so considered a bacon, avocado and tomato sandwich. But, that sounded a bit heavier than I wanted, so I ended up with this Salad: Applewood Smoked Bacon, Avocado, Tomato, Romaine, Chopped Egg and Dried Cranberries lightly dressed with Honey Mustard Dressing and freshly ground Black Pepper.
