    patrickamory, Anna N, and dcarch - thank you for your kind words last week about my Pollo alla Calabrese. dcarch - Corned Beef and Cabbage is not just for St. Patrick's Day and I need to remember that more often. SobaAddict, I too love the cabbage best; I even eat the leftovers cold from the fridge. Kim Shook - I think cannellini beans would be a good substitute for the lentils in my soup as well. I used the leftover broth and vegetables from our corned beef meal to make a soup and we had it for dinner last night. I added some diced ham and a can of cannellini beans to the leftovers and dubbed it Ham and Bean Cabbage Soup. Tonight was Petite Crab Cakes and Grilled Asparagus

    Lentil and Sausage Soup, adapted from this recipe. I used regular brown lentils, a mix of pork and chicken stock, kale in place of the spinach, and sherry vinegar.

  8. I divided my hash into two batches. The first batch was started in 3" x 1" Egg Fry Rings on a buttered non-stick griddle: When the bottoms had browned, I removed the rings and flipped the patties: In the meantime, I made a couple of poached eggs and then served them on top of the hash: The second batch, I cooked free form style in a cast iron skillet: I tossed the hash several times and continued to cook it until it was well browned: The consensus: We prefer the free form style, as the hash was nice and crispy throughout.
  9. Kim, thanks for asking and David, thanks for posting the proportions. I have leftover corned beef from Friday night's dinner and frozen hash brown potato patties defrosting in the fridge to use for making hash for our Sunday breakfast. I am going to use cream instead of evaporated milk. I'll report back tomorrow.

    More comfort food tonight: Corned Beef, Cabbage, Potatoes and Carrots with lots of leftover beef for sandwiches and hash this weekend.
  11. Hi again. My GF had a craving for her favorite burger from Tookie's so we went there for lunch the other day. This time I ordered Tookie's T-Bird Salad with fried chicken and honey-mustard dressing: After lunch, we stopped by Rose's Seafood, where I purchased a pound of lump crab meat. (Yesterday, I made 16 small cakes and froze them so as to have them on hand for when the craving hits!) Then we went by Barnes & Nobles to use the discount coupons we had each received in the mail. I didn't really need anything, but took a look at the cookbooks on the bargain tables and found Curry Cuisine and brought it home.

  13. Thanks Anna. Last week my GF and I had lunch together after spending a couple of hours birdwatching at a local nature preserve. We had heard that three bald eagles had been seen there but we didn't have that kind of luck. For lunch, we went back to Mambo's Seafood. My GF ordered a half-order of the calamari (sorry about the blurry photo). It was perfect - nice light crust and tender squid! She also had a combo plate of fried fish and shrimp with Mambo's shrimp fried rice. She ended up with two to-go boxes of leftovers! I went with the grilled shrimp and fish platter, which came with a small salad and the shrimp fried rice. I knew I wouldn't be able to eat it all, so I ordered the rice to go and had it with dinner that night.

    As I posted on the Valentine's Day topic, we had Pollo alla Calabrese for dinner last night. The dish is so simple and so good. The recipe is here. I used chicken thighs, white potatoes, campari tomatoes, and white onion. The house smelled so good while these were baking. My plate. Yum!
  15. Tonight we will be having Pollo alla Calabrese. I will post photos tomorrow in the dinner topic. Many thanks to djyee100 for posting about this dish over there; very comforting dish for a couple that have been together for 37 years. Happy Valentine's Day to all.
  16. I've used this recipe, with some changes, to make a very nice pork chili. Spicy Red Pork and Bean Chili I did not use the coffee when I made it. I used some masa harina as a thickener and added some Sriracha sauce at the end.
  17. Hi everyone, my GF and I had an early lunch together several weeks ago. We had a couple of early morning appointments and ended up on the deck at Floyds about 10 minutes before they opened. We had wanted to eat out on the deck, as it was a gorgeous morning, so we chose our table and waited. My GF decided to try the crab bisque, which was very good, and the seafood salad, which was just okay and not really worth the price in her opinion. Floyds is one of my favorite places for crawfish half and half (1/2 etouffee and 1/2 fried) but on that day I decided to try their calamari. I'll stick with the crawfish in the future. The calamari batter was too heavy and the calamari were tough. Very disappointing. However, we really enjoyed being out on the deck and combined our lunch with a little bird watching.
  18. We stayed in Kailua for several days six years ago. The place I still remember the best of the places we dined was Haleiwa Joe's in Kane'ohe. The restaurant overlooks Hai'ku Gardens. The view was spectacular!

    Today I made Chipotle Pork Posole from a Martha Stewart recipe. I upped the amount of adobo sauce to give it a little more heat. DH liked it very much.

    Steak Night! Grilled Beef Rib Eye Before throwing the steak on the grill, we marinated it for 24 hours. The marinade we used comes from a recipe on allrecipes.com named Savory Garlic Marinated Steaks.

    Dinner last night was: Fried Catfish Tacos - Fried Catfish Nuggets on a Flour Tortilla and Jalapeno-Lime Cream Sauce, topped with a Cabbage, Carrot, Green Onion, and Cilantro Slaw. I had one, DH had three!
