Thanks, toolprincess. The chili turned out very nice, after I gave it my Texas twist. The basic chili was just too sweet for our tastes, so I added some ground cumin, cayenne pepper, granulated garlic, and extra chili powder, black pepper, worcestershire sauce, and cider vinegar. I also added a couple squirts of sriracha sauce. I used my stick blender at the end to smooth it all out. Since there is only the two of us, I have portioned the rest of the chili into four small containers and have put them in the freezer for the next time we have chili dogs.

Thanks to the link posted here by Toolprincess on her eG foodblog, we had Eastern North Carolina Chili Dogs with Crinkle Cut Fries for dinner tonight.

A great article here about Eastern NC hot dog chili (and a recipe!). Thanks for the link! The chili is finishing on the stove and the dogs are waiting to go on the grill. Homemade buns, yellow mustard, and chopped onions standing by. Crinkle cut fries, with Heinz ketchup, will be on the side. Yum! Perfect Saturday fare! Very Yum! I'll post the results on the Dinner topic. Thanks again for a very enjoyable blog.

Chicken Fajitas - grilled chicken breast and onions with avocado, homemade pico de gallo, black olives, shredded cheddar, and sour cream on flour tortillas.

Panaderia - Your avocado (one of my very favorite foods) looks delicious! I have a couple that are ripe and ready to use - I was going to make guacamole, but instead, I'm going to keep it simple and just slice them up and use them as an accompaniment for our chicken fajitas tonight.

Today my GF and I drove the 20 some miles down to Galveston for lunch. We chose to visit the Mosquito Cafe, one of her long time favorites but new for me. You place your order and pay at the counter and they bring the food to your table. This plaque was about 7 feet above the floor! My GF had the Mambo - Slow Roasted Pulled Pork and Red Leaf Lettuce on a French Baguette with Housemade Fruit Chutney on the side. And I had their Carnitas Tacos - Slow Roasted Pulled Pork on Soft Corn Tortillas with Field Greens, Chipotle Sauce, Housemade Salsa, Rissole Brown Rice and Housemade Black Beans. When we were finished, we crossed the street to check out the recently opened Patty Cake Bakery, which has the same owners as the Mosquito Cafe. My GF purchased several items to take home but we shared a couple of the Black & White Cookies. Yum!

Oh my! Did you do them from fresh crawfish or already cleaned and processed tails? Breading and frying method? That is one of my "last meals" Hi Heidi, I used already cleaned and processed Louisiana tails and used a breading and frying method similar to the one in this Emeril recipe here. It is important to not overcook the tails.

Ditto on the oxyclean and hot water. A friend recently turned me onto the oxyclean and a bunch of kitchen towels that were destined for the garage went back into the kitchen rotation.

Dinner on Friday night was Use Up The Leftovers Night (we had the rest of the linguine and sausage from earlier in the week) and a fresh Salad made up of the last of the red and green lettuce from my garden, gifted home grown grape tomatoes, cucumber, carrot, mushrooms, green onion, black olives, dried cranberries and bacon bits. Last night was Pizza night! I, again, used Reinhart's recipe for his Pizza Americana dough from BBA and topped it with a tomato sauce, shredded mozzarella, mushrooms, black olives, sausage and pepperoni. This dough really holds up well to lots of toppings.

Your welcome. When I first cut into the enchiladas and beans, I tried to make a nice clean cut but the cheese wouldn't cooperate.

dcarch - Thank you. Your Father's Day spread is gorgeous! We had a very cheesy meal for dinner tonight. Chicken Enchiladas Suiza topped with Manchego and Refried Beans with Vermont Cheddar.

RRO - Thank you. We finally got some much needed rain and cooler temps yesterday and the risotto was perfect.

Genkinaonna - It was delicious! The first time I made this, I did it with porcinis and just happened to have leftover duck and water chestnuts (they add a nice crunch). I also used some chopped green onions in the garnish, but didn't have any on hand yesterday. This was my first time using morels and I am in love!

So many great looking meals everyone! I've been on the road for the last week and have really missed cooking at home. A friend gifted me with several pounds of homegrown tomatoes today and I used some of them to make a fresh tomato sauce to go with our pasta tonight. Linguine with Hot Italian Sausage, Roasted Red Peppers, Fresh Tomato Sauce, grated Pecorino Romano and fresh Boxwood Basil (from my garden)

I saw some of these Ziploc VersaGlass Containers today. I think they could work as a butter keeper.
