    Another hot and humid day here, so Salad with Cajun Spiced Grilled Chicken and Ranch Dressing was on the menu for dinner tonight.

    Thanks Kim. I was disappointed recently when I ordered a grilled shrimp salad and the shrimp was grilled but chilled. I like the shrimp and/or chicken to be freshly cooked and still warm, so I made it myself!

    OMG! Such lovely dishes! My dinner tonight was a Grilled Shrimp and Chicken Salad with a Honey Mustard Dressing.
  6. My favorite way is stuffing half an avocado with the cottage cheese and sprinkling it with some Lawry's seasoned salt.

    Last night, we had Tangy Pan Fried Tilapia. The fish was smeared with Dijon mustard and then coated with Zatarain's Fish Fry mix and fried in peanut oil. For a side we had Zucchini and Red Bell Peppers. These are a couple of my first photos using my new light box. ;-)
  8. I've got some catching up to do! In July, my GF and I visited the Pei Wei Asian Diner in Webster. She had the Mongolian Shrimp with Fried Rice, and an Egg Roll. I started with Hot and Sour Soup, and didn't remember to take the photo until I was half-way through the bowl. For my main, I had the Mongolian Beef and, like my GF, the Fried Rice. Today my GF and I dined at the Monument Inn, in LaPorte, which sits along the Houston ship channel. Here's the view from our indoor table. Way too hot to sit outside! Both of our meals included their homemade dinner and cinnamon rolls. GF had one of the cinnamon rolls as her appetizer! VBG! Each of our meals also included a small house salad, not pictured. GF had the Fried Seafood Combination Platter (Oysters, Shrimp, and Stuffed Crab) with a fully loaded Baked Potato. She had so much leftover she took home two to-go boxes that will serve as two additional meals. I had their Grilled Redfish and a Vegetable Medley. No leftovers for me!

    Delicious looking food everyone! We had leftovers to use up, so dinner last night was Nachos Grande, made with refried beans and pulled pork; guacamole, sour cream and pico de gallo on the side.

    4th of July

    We will be grilling pork steaks, zuchinni, portobello mushrooms and onions. The cole slaw and the deviled eggs have been prepared and are resting in the refrigerator. We will also have some locally grown tomatoes, sliced and dressed with balsamic vinaigrette and tiny basil leaves.

    Back on the grill for dinner tonight. Grilled Chicken Thighs, seasoned with Lawry's Seasoned Salt and granulated garlic, and Herbed White Beans (cannellini beans with tomato, onion, parsley, garlic, olive oil, red wine vinegar and black pepper)

    Way too hot to cook indoors here as well (108F on the patio this afternoon) so dinner was a grilled steak and a salad of romaine dressed with a bottled Caesar dressing.

    Brief marination in soy sauce, ginger, garlic, roasted sesame oil, lime juice and then roasted for about 3-4 mins in 450 F oven. Thanks, I'm going to have to try that real soon.

I mostly use almond flour, with or without grated parmesan, as breading for boneless skinless chicken breasts but here is a bread recipe I've made several times: Three Minute Microwave Bread After making this bread, I like to brown/toast it in a medium hot non-stick skillet, make a sandwich with ham and cheese, and nuke it again just until the cheese melts. The Best Grilled Ham And Cheese Ever! Ingredients 1 Tbs butter 1 large egg 2 Tbs almond flour 2 Tbs flax meal 1/4 tsp baking powder 1 pinch SplendaProcedure Melt butter in square "bread slice size" or larger microwavable container. Beat in egg. Stir together dry ingredients in another bowl and then add to beaten egg and butter. Mix thoroughly with a fork. Cover with plastic wrap and vent. Microwave on high for about 1 minute 30 seconds. Microwaves may vary. Check on it. Do not over cook. Source: lowcarbfriends.com

  23. I have a couple of lunches to report. Last week, we went to Monterey's Little Mexico location in Dickinson for Tex-Mex. My GF had had a to-go meal from them the week previous (and enjoyed it) and since I had been curious about them but had never been, that's where we went. The meal started with the usual Corn Tortilla Chips and Table Salsas. Last week my GF had sampled their Stuffed Avocado, which turned out to be large chunks of avocado on shredded lettuce and topped with grilled shrimp, fish, and mixed vegetables covered with chile con queso. She had opted to have the queso on the side and I followed her example. I know it does not look like much (especially since the photo is so blurry) but it was delicious and I cleaned my plate. The queso was great with some of the chips. My GF had the Beef Fajitas with Bell Peppers and Onions, which came with Guacamole, Pico de Gallo, Rice, Refried Beans and warm Flour Tortillas; she also had shredded cheese and sour cream. Earlier this week, we were in Houston and ended up at La Madeleine for a late lunch. My GF had their French Dip with Tomato Basil Pesto Pasta Salade and French Vanilla with Berries Mini Parfait, and I had their Salade Sampler with Spinach Salade, Chicken Salade, and a cup of Tomato Basil Soupe.

    Bruce, Shane, and Kim - thanks for the compliments on my grilled chicken wings. We like our wings without breading, so cooking them on the grill outdoors makes clean up so much easier than deep frying them indoors. Yesterday, I made carnitas using one of the Homesick Texan's recipes, so dinner last night was Tacos with Carnitas and Avocado
