  1. Lamb Bolognese Lasagna

    Homemade Noodles--  100g AP/ 1 egg/ plus water and oil as needed

     

    Bolognese-  Ground Lamb, mirepoix ,liver, heart ( chicken ), sardine (  don't hate  the player )

     

    Layer in just --mozzarella, Romano, peas, noodles, sauce (  Mine )

    How long did you cook 'em for?  Braising liquid? 

     

     

    probably  3-4 hrs  @275F  /  slightly cooled/ defatted/  then re heat/ 350 for service

    Peppermint whipped creme

     

     

    Dessert was the apple galette and this super cool new product I got at the liquor store--Whip Shots.  Vodka mixed with whipped cream (except it's not--I don't even think there is any dairy in it). Comes in peppermint, caramel, vanilla and mocha.  Don't even need a glass, just shoot it straight in your mouth lol.

  4. I actually don't even know why i did this,  was just gonna make some cabbage rolls.  So I hollowed out the core to boil the head and sperate the leaves. But, Damn I have   this big whole why not stuff it

     

    Had some wild rice and some giblet stuff,

  5. Thawed, fried, bake

     

    Cod/potato burger on a Potato bun--  Cod had Breggs herbs seasoning and the potato was garlic and butter ( Mash )--no egg to bind so a little tighter processing

    RT..  Pretty simple/ Dry/ I season (  commercial blend )/  then i powder them in Wonder flour/  egg wash dip/ shake in crumbs/  dry for 1hr/  fry 325. Delectable  

     

    @heidih--  flakey/ not dry/  this halibut came from Alaska from my patient.  These filets  are similar to a salted cod/  much more dense
