Black eyed peas are a must for New Year's Day. I haven't decided on the rest of the menu yet. NYE is our anniversary--15 years--so I'm trying to think of something fun and wonderful. I have foie frozen so that will probably be in the mix somehow.

Happy Boxing Day! I hope everyone is having a wonderful, relaxing holiday. I love the days after Christmas.......everything is done and I can take time and enjoy my Christmas lights Christmas eve I decided on Christmas enchiladas .....well I called them Christmas enchiladas. Seafood enchiladas (white), Chicken enchiladas with hatch chile sauce (red), Green rice and Rancho Gordo beans (the name of them escapes me right now) Christmas day we spent a couple hours at my in-laws house. My sister-in-law made three pans of lasagna and salad. Everything was very good. I contributed bread. I didn't eat too much there, though, because I was saving room for the prime rib that was relaxing in my fridge He's all seasoned up here and ready for his fridge time uncovered. I was nervous about cooking it, but, I gotta say, it was a Christmas miracle. It turned out soooooooo good. I put it in at 4:00 p.m. at 210 degrees F. Recipe said 200 F, but my oven runs a bit cold. I took it's temp at 6:30 and it was at 90 degrees F. At 7:30 it was a perfect 120 degrees F so I took it out and let it rest for 30 mins. In the meantime I heated the oven up to 500 degrees F. After the rest I popped it back in for about 6 mins. so that the outside was nicely seared.

I've greatly enjoyed reading this whole thread today. I am not a fruitcake liker, but after reading and seeing.....maybe I'll try my hand at one this coming year. I've never had the pleasure of trying a homemade one....only those icky store bought kinds (shudder). David, I'd love to see a picture of your aged cakes.

Had Christmas with my husbands kids (well they aren't kids any more, but I still call 'em kids ) and we had brunch before we opened presents. Breakfast .....casserole? Strata? I used homemade bread slices with diced tomatoes, shredded cheddar, onions, mushrooms, broccoli and ham. Then I poured a dozen beaten eggs and a couple cups of cream over the top. Finished wrapping most of the Christmas presents today. Annnnnnddddd my washing machine broke a couple days ago. I took it apart. The pump has gone out, so I ordered a new one. Spent most of the day (in-between wrapping) staring out the window for FedEx to bring me my new pump. Never showed I hope they come tomorrow. I'm NEEDING my washer. Anyway, I needed comfort food tonight. Smoked boudin, eggs, toast, tomatoes and hash browns . My husband and I were going to share eggs....scrambled and runny...somehow I missed out on the runny....

Lasagna sounds wonderful. I need to make that soon. I go through periods where I drop and break TONS of stuff. Most recently I shattered a bowl that I loved from my mom. Sigh.

Thanks everyone! I'm glad they are finished. I forgot to mention that the cotton candy flavors are cinnamon stick, candy cane and gingerbread. They taste very good and I think they add a fun "pop" to the baskets.

Eleven baskets finished and loaded in the car. O M G. I'm tired. I announced my retirement from the baskets tonight. They wrote back "you said that last year". I wrote back "I mean it this year"........so we'll see ..... The bows (as I showed earlier) were all hand made by me out of wired burlap. I bought the tags from a person on Etsy--they were plain. I wrote and stamped them myself. I also stamped the bread wraps. Baskets bought on Amazon. Close up of bread Breads all wrapped Items that go inside each basket. Summer sausage, candies, cheese, crackers, cookies, homemade zucchini bread, cotton candy Close up Eleven ready to go I haven't added up total cost. I'll do that when I get a chance and post. Time for a large refill of wine......I'm gonna go prop up in bed, drink and relax. Thanks again all for helping me.

Nothing really stood out to me. I do want to try the velvet chicken. I've made that before for Asian dishes, but I've never done a whole breast.
