  1. It is a different sort of "crust" on the top. It's kind of custardy but the top is crunchy and light --like sugar. The bottom is just a regular pie crust. It took about an hour and 20 mins for my pie to get done, but my oven runs cold. Here is a link to the recipe: http://sweetteaandcornbread.blogspot.com/2012/05/peaches-and-cream-pie.html
  2. I decided it was time to open and try one of the quarts of peaches that I canned this summer. I used a recipe from one of my favorite blogs....Sweetteaandcornbread. It's called Peaches and Cream Pie. It truly does taste like peaches and cream. A bit of summer on a plate on this cold winter day.

  10. Black eyed peas are a must for New Year's Day. I haven't decided on the rest of the menu yet. NYE is our anniversary--15 years--so I'm trying to think of something fun and wonderful. I have foie frozen so that will probably be in the mix somehow.

    Dinner 2014 (Part 7)

Happy Boxing Day! I hope everyone is having a wonderful, relaxing holiday. I love the days after Christmas.......everything is done and I can take time and enjoy my Christmas lights Christmas eve I decided on Christmas enchiladas .....well I called them Christmas enchiladas. Seafood enchiladas (white), Chicken enchiladas with hatch chile sauce (red), Green rice and Rancho Gordo beans (the name of them escapes me right now) Christmas day we spent a couple hours at my in-laws house. My sister-in-law made three pans of lasagna and salad. Everything was very good. I contributed bread. I didn't eat too much there, though, because I was saving room for the prime rib that was relaxing in my fridge He's all seasoned up here and ready for his fridge time uncovered. I was nervous about cooking it, but, I gotta say, it was a Christmas miracle. It turned out soooooooo good. I put it in at 4:00 p.m. at 210 degrees F. Recipe said 200 F, but my oven runs a bit cold. I took it's temp at 6:30 and it was at 90 degrees F. At 7:30 it was a perfect 120 degrees F so I took it out and let it rest for 30 mins. In the meantime I heated the oven up to 500 degrees F. After the rest I popped it back in for about 6 mins. so that the outside was nicely seared.

    Dinner 2014 (Part 7)

Finished wrapping most of the Christmas presents today. Annnnnnddddd my washing machine broke a couple days ago. I took it apart. The pump has gone out, so I ordered a new one. Spent most of the day (in-between wrapping) staring out the window for FedEx to bring me my new pump. Never showed I hope they come tomorrow. I'm NEEDING my washer. Anyway, I needed comfort food tonight. Smoked boudin, eggs, toast, tomatoes and hash browns . My husband and I were going to share eggs....scrambled and runny...somehow I missed out on the runny....
