Advanced Bread and Pastry by Michael Suas The Pastry Chef's Companion: A Comprehensive Resource Guide for the Baking and Pastry Professional by Glenn Rinsky and Laura Halpin Rinsky (their names are soooo familiar.. I think I saw it in a magazine, I can't remember..) EDIT: Oh, they wrote an article about high-ratio cake in an issue of Pastry Art and Design I own. Warning: link above is very strange..   2. Joe (desertculinary) has a lot of bar recipes one after the other on his website (actually I was looking for the laborious but dazzling multicolored seven-layer bars). I was about to say rice krispie treats too, you can even put a few on as a centerpiece with icing "mortar". I just don't know if they're a big seller (not common in my country). In any case, good luck with the sale!

  4. Actually it's the fact that they're "sibling" publications that puzzles me most in connection with the too-similar content of famous recipe requests. I do agree with the "clinical" look of the covers (except for the food itself, but even the food has a blue tinge). It's the trend. I blame Donna Hay. Kidding!

Oh Peter, I forgot to say, mix or no, the pancakes look really good and I'm glad you have kids to spread the calories of that pie around Rebecca, I only have two (kind of 2-3 years old) issues of Saveur, but I thought they covered the adventure aspect pretty well. I have to agree Bon Appetit is not the magazine you're looking for. It's really become more of the "easy entertaining"/"fast, fresh ideas for meals" magazine. Do they still have the section in the beginning where readers request for recipes from famous restaurants? I found it odd that both Gourmet and Bon Appetit had that (but at least you got a few recipes in each issue that you know someone had already raved over). And that each year there is one Italy-centric issue for each (I love Italian cuisine and all, but... come on). It seems that based on your description, Gourmet may be the best fit for you.
  6. Yikes. A mix? Who wrote the recipe? Lee? I was a big fan of the old photography! Do you recall all those "What America Eats" issues? With the pizza in front, sausage and cheese cascading over golden dough?

When was the last time a magazine was daring enough to use pictures in typography? I think never! You could change the plate with each issue to reflect what's inside! w00t! Yeah, I suppose the old logo did not really reflect the content. I see they're adopting a more Gourmet-magazine sensibility in the cover photograph. Or maybe it has infected the interior too? Blue and sparse. Trendy, but not whimsical. Maybe it was taking too much energy to style whole rooms around the food? Too bad, I liked their old style. I think the Fast, East, Fresh section is usually a winner anyway (take note it doesn't say, "..., Flavorful"), with a few tweaks here and there.
  8. I just saw the cover of the new Bon Appetit (February 2008). I've read here that they were taking a new direction, trying to appeal to a younger crowd, etc. So, after the makeover, are they really that different? Is there a noticeable change in the recipes/ quality? Why is the "O" in the title a different color from the rest of the letters? I usually buy back issues at the surplus bookshop (about 6+ months late, to save on money), but I was a moderate fan of the old format. I'm curious to know what you guys think of the new one.

K8 - After months of going over these forums, I picked up a little something I guess Imagine my horror when Chef Dean (chiantiglace) mentions here that no plated dessert can be simpler than his biscuit-mousse-creme brulee creation, hahaha! Well, gotta start somewhere. I've been reading Tish Boyle's Grand Finales (Neoclassic view of plated desserts) in the bookstore (it costs $73-- to much for me) and I've picked up some new inspiration, I only hope I can pull through. It's very intimidating for me! As T2C mentions above, the olives are soaked overnight in syrup and oven-dried. I've been wanting to open a topic about dessert professional-oriented websites (either here in P&B or in Food on the Internet), but I'm more afraid of criticism for some reason (that website is crap, the recipes are bad, it hinders imagination, it's a rip-off, etc). So I'll wait till one asks.. Fanny - I read your blog post too, I've never had a Florentine but now I'm very curious (just for yours-- they look very classy). Pierre Herme does his square and half-dipped in chocolate with orange peel, right? What do you think of those? Rob - haha, it is more a triumph of styling than anything else, and even then, during the plating I don't think a dessert has ever been told "F***!!" more times in human history (though many P&B regulars might step up and claim otherwise). GTO's given me a lot of tips.

  18. So, tri2cook, what was your inspiration in making that dessert? That's great creativity, I wish I could get a taste I've never heard of candied olives before. Eliza: brownies!!! Here's my first attempt at a plated dessert and also my first attempt at an entremet. I called it a "Maya Gold", inspired by the organic chocolate bar that I wanted to play with. That's orange creme brulee with dark chocolate orange mousse and fudge brownie base (if I had tons of money, I would've added Grand Marnier in there somewhere to drive the point home), then glazed. Decor is candied orange peel and caramel, uh, thingies. Just to keep with the pyramid-jewel-theme. Bitten through: I'm really tired!

  20. Haha, I wasn't breastfed (just for, like, a week maybe) and I have eczema and allergic rhinitis. Well, atopy runs in my family on both sides. (At least I don't have asthma.) Oh, the eighties! My mom had a crush on the host of "Name That Tune" (George DeWitt, I think), though. She jokes that's why I have dimples and can flawlessly carry a tune.

  25. Every chance I get to see that book, I leaf through it (it's quite expensive... £25). Beautiful. When I saw him prepare the strawberry salad with grilled halloumi, I immediately made something similar. Ditto for the grilled peach salad. EDIT: Aw, Oliver lost to Batali. Oh well. It's the first time I've heard of cobia. I heard it at least wasn't an embarrassing defeat.
