I like chocolate and figs and would try to add about 1/4 cup of good cocoa to the recipe some coffee and lots of good vanilla …yes just when you eat the cake you can not think "pineapple upside down" you need to think fig ginger upside down with mocha cake or something it needs some ginger in the figs for the bottoming caramelize them isn't a problem but the figs do get mushy when frozen …citric acid a tiny bit to get a little tang but not much and ginger ..not lemon in my opinion and make the cake more of a mild mocha I would have done it and wish I had seen this earlier before you changed your mind I get where you were going with this ..I have figs and maybe will try this idea soon I like chocolate and figs
  2. ok cake it is first ..I have to bake it at my son's house. that is why I was thinking of the fudge I can make it on the camp stove … I can make both just what do I want to eat NOW ??? the reality is if you put both down in front of me I would eat both right now cake and fudge put one on top the other! I am on a seriously intense sugar journey right now and am trying to keep up physically with my poor nutritional intake but I am old and balance is not easy LOL! I have NEVER felt a pull to sweets like I have the past week or so ..is it the moon? Is there a maple sugar moon now because I could drink it from a cup if there was! I want it all cake, pie, fudge no protein no veggies … just desserts and really, really sweet ones! OY!!!! do I chase the demon or just hope he will back off on his own
  3. /when I hit a quart I am DONE what about a maple black walnut fudge? I hate to waste ingredients but I get the same rush thinking about a maple black walnut fudge as I get from pecan pralines. and really either one would be fantastic right now ..but I am afraid of wasting ..I am fudge proficient and praline proficient ..while the weather is good and I can go hike it off I better just try it the other half I will freeze for the holidays . Yes if you want to eat black walnuts go and buy them shelled at the farmers mkt ..i will be from now on ..glad I did it once but not again the pig gets the rest I have never even tried black maple walnut fudge but wow that sounds good I will have to research this
  4. ok then I get that but then we have to break it down to digest it so yeah it is screwy huh? and it looks yummy .and come on what "food" can EG folks NOT eat? as a collective "we" really do eat "everything" that is edible and this seems to be one thing no one has actually found a way to eat and enjoy I am so sad but do not have enough of a kitchen and Beano doesnt do a thing to help me so I am not willing to risk more than a proven experiment with someone who says "i tried it this way and suffered before but can eat them like this" that I will try! I grabbed those just this morning they had spilled out on the grass and I am starting to panic wondering how many are actually in that box! they are big ..and yes if it gets cold I know they will taste better ..I see them once in a while at Hmart and that is it but no one has them in their cart or I would ask ..they are in other grocery stores and people look at them and the produce folks will tell you about them but when you ask "have you eaten them? " if they have and it affected them they do share that!!! LOL!!! anyone who has tried them and had it affect them admits to it it is so extraordinary that something that mashes and holds butter like potatoes ..fries crispy ..tastes good raw and claims to be good for you ..can also have such horrible side effects for the part of the population that I have talked to ..that is what does not make sense to me! /I cooked a bunch for the animals and they seem to enjoy them so I can cook them for someone around here I guess ..hope they can process inulin guess I will find out the quince smell so good right now I wish I could post the smell to share!

I will follow that person …I tried fermenting them thinking that had to do something to help and that was WRONG-OOOOO you know it is so strange to have dietitians telling people to eat these things .I was sold and they tasted so good! not like burdock that supposedly does all the same things for blood sugar and pretty much only tastes good as a banchan ..these guys taste good btw I can not eat burdock either because of the same inulin problem I am so confused part of what makes it so healthy for blood sugar and blood pressure is the same thing that causes such a tremendous rampage on your GI system ..and that to me is why pills get invented! no problem with any other food but this and burdock not EVER ! so I am wondering about the ground nuts I planted and perhaps the idea that "some folks experience severe reactions the second time they try them "" should prohibit my trying those more than once when they are ready to harvest? see no one eats them here either with out "issue " so far huh? they should not be "food"

LOL??? that is random we do not get much okra here in the Puget Sound or I would probably no one wants Jerusalem artichokes either . why are these things EVEN FOOD????? they list 103948 benefits to eating them..they taste really good and are easy to prepare they are native and shit and voila they cause horrific pain stomach upset and god knows what else …everything I reads just gives it the "hands in the air" attitude you either can or can not eat them and so far I have not met anyone who can eat them with out knowing exactly what I am talking about I want to give them to "Bacon" but am afraid he will miss one and the whole yard will be full of them …I mean these could be such an easy fuel if they did not kill you in the process. Guess I will feed them one at a time and make sure he eats them all so they do not go the ways of bamboo there are no answers to eating these things are there I did a vigorous search because I am getting high blood pressure over my kitchen I thought adding them to my diet would be a good thing ..sunchoke smoothie anyone? oh and no luck for me with Beano I tried then almost ate the whole bottle to help the aftermath ..it is like a knife in your gut and not eating them myself again unless someone says "HEY this is the answer!!!!" so many good attributes attested but so very much pain

I am bumping this thread because I planted them as a noise barrier again a few years ago and regretted it ever since … have an entire bed of them and since we never do have a real "first frost" here … if anyone, anywhere made these more comfortable to eat? I thought I would bump it and see because i tried the suggestions on this list anyone? the bed grows pounds and pounds of them. I really do enjoy the flavor and texture they fry nice crispy and sweet and then I am buckled in pain wondering what ungodly poison entered my being beano a joke with these it doesn't work every year when they are spilling out of the bed I look at them and wonder …"WHY????? did I plant them and why are they so vengeful????!!!!!!" no slow cooking makes no difference to me either I tried to pickle them ..that was the worst idea of all that year I did that..and no you can not "ungrow" these things they are in there forever like bamboo so I just contain them

  10. this may look like poorly made cinnamon toast. is Korean milk bread and the "toast is a bit stale and dried out with the pieces together so the butter melts in the middle and it is dry grilled.…because that is how I roll …I used my friends butter from Port Orchard… fresh ground cinnamon and vanilla sugar so really while my struggle is real..and trust me ..right now ..the struggle is wearing on my last nerve ..and the pig ..it is REAL ……and I just had to hire a pig sitter to come stay with him so we can both leave the house for more a few hours and not destroy the neighbors treasured gardens … so my toast is being posted…it is tasty and so is the coffee ..Ethiopia Guji Zone Akrabi …roasted deep and dark Olympia Washington style …the roaster keeps shorting out what is left of the kitchen power supply ..we will have lots of outlets and switches but I have not seen a counter yet?????? not bitching so toast coffee and hopefully others are eating better today I will eat eggs later. once the world settles and I make a path and oh my freaking goodness it is so real today I am posting toast on EG
  11. I found this too unpleasant to eat as a "ready to serve" anything on anything ..but my husband on the other hand really likes it! He said he "would, could and probably will" consume a can of it if left alone for very long. I made the recipe on the back of the can for the chocolate version of Magic Cookie bars but I changed the pecans into ground almonds ..used more and a mix of all the leftover chocolate chips I had in the pantry and about a cup more coconut a shot of vanilla I made with rum base and it was like a MAGIC MOUNDS BAR! holy crap that was good and now we are up early and off on a 6 mile uphill urban hike. I would buy it again and make this again but only when I had more people around to eat it. but a "no" for me on "ready to eat" and a "yes any day, give me a spoon and you chase the fking pig for a while" for him ..if that matters to anyone ever LOL for some reason after a really shitty week this hit the spot mentally and physically. did not and will not open the caramel until the next "day of need "
  12. This could be "old news" and if so please forgive I do not get out much lately! My husband kryptonite is Eagle Brand Condensed milk in super strong coffee. (like Vietnamese coffee but hot and strong not over ice) …we went shopping earlier this week and I said ? "how funny I just saw Eagle Brand has broken out of its mold and trying ..for a 'limited time only' chocolate and caramel" he said "WHERE"! now these are in my doorless cabinet He put them in a prominent position LOLOL! right smack in front of all things "healthy"! / He hates flavored coffee the condensed milk is a stretch for him so I know he wants me to "make something" Does Eagle Brand REALLY need to be something different? I really think they have had the caramel previously but it was called "dulce de leche"(that is so easy to make when I want it and tastes so good home made that I never have purchased the canned or jarred ) I cannot imagine the three things I make with SCM it being any better if they are pre flavored with chocolate or caramel but maybe? ? (Key lime pie, miracle bars, tres leches cake) I call his coffee "baby coffee" and he has the kids and grands all drinking it that way with him when they visit. I have only tried Eagle Brand if I put a spoon in and taste it I do not like it at all…I am not a fan of sweet coffee but will have one once in a while for dessert. when we lived in Panama back in the early 80's they used to have a lot of TV commercials during the day .. showing happy healthy kids starting their days with a big plop of SCM on white bread and a huge smile .. I had, at that point, never tried it and thought "why not" ? so I tried to put a big blob of it on white bread ..epic fail It was offered as a topping on a snow cone, that lead me to shave ice and both I love to this day with SCM so maybe chocolate Eagle brand on shave ice would be good ? I am afraid the chocolate or caramel flavor may not be good? Maybe going for "dulce de leche" ? Has anyone tried these? have you seen any other flavors? any ideas for something for husband? I may do a shave ice thing with the chocolate any interest in talking about this? If you have tried it ..how was it? does it taste like chocolate and caramel or is it "flavored"
  13. a little off topic but I pressure cook bones into mush with vegetables and then freeze it in cupcake pan then put them in freezer bags for dog treats ..my dogs have always adored this snack
  14. please give an update as to how you like it I was thinking about getting one for each garden ..the chickens ducks and now the pig are destroying all my attempts at building compost and while it is ok to shovel it back up for the garden I would prefer to have a neater system ….I want to designate WHERE the compost is used right now it is a free for all out there ..this looks neat and unobtrusive.
  15. I was washing the nuts Deryn, right into the yard and it killed so many worms ! I was horrified and now I know I have to be really careful ..the chickens on the other hand were having a feast of all the dead worms ..I hope it doesnt kill them ! I wash walnuts all the time ..it never occurred to me these would be so poisonous to worms and plants…this should be round up instead of round up! the trees are huge I would never plant one ..but I will go pick the nuts up and clean them where I am trying to kill the bamboo
  16. I so want to try them ..RWood I am determined to try some one of these days I just adore nuts of all kinds . ok these are a bloody mess! I am doing them a bucket at a time I gave up thinking gloves would help my hands are a lovely dark brown now I told my friend about the nuts and she said " I was just going to call you I found a tree on abandoned property come get them no one is picking them up" how can that be? I think I am a food hoarder..I have anxiety that food is just laying there on the ground with no one doing anything with it LOL! I am picking them up in the morning … when I lived in Ok I would go out every day to the parks and pick up the pecans ..my friend had a cracker and she would run them through..I would watch Dr Who episodes on my VCR and pick nuts …I think it is meditative
  17. muslin bag I keep just for nuts and a hard rubber mallet no problem no noise and no mess..I do not like to heat the nuts and my food processor does that when I try to chop them in there ..I can not even imagine the mess I would make trying to chop them with a knife I used to use one of those giant wooden mortar and pestle …very light weight ..I bought it in Panama but it was from Japan it was lost in a move and I never replaced it but that kind of thing chops nuts nicely and is so easy to just wipe out but they work well you can find them in Asian mkts they are great for nuts and pretty light weight and fun to use if you are into that kind of thing ..Love the momentum of using a mortar and pestle correctly.

  19. Yum! Bananas and black walnut! Thanks for that site i will linger there for sure ...they are expensive at the farmers mkt i can see why! After dealing with 200 lbs of apples i am crippled tomorrow i will start cleaning the nuts ..i have to gomrake acorns for Bacon and there is a walnut tree near by imjust heard needs gathering... if there is a good movie and a hammer i can pick nuts ..but i would sit in the hammock and ignore thiamall Except the pie and cake ! I have never tried a hickory nut and had hoped to i wonder how strong they are? Thank you both i wish i had the knack of pecan pie i just screw them up so badly! I bet eg has a pecan pie thread

I know they are love/hate but I thought there was a topic and the only one I could find was really old and not much about baking with them it was under cooking..I honestly thought I had read a post where someone was talking about black walnuts ? I would love to make two things for sure and am asking please for some help? 1. black walnut pie (like a pecan pie but I am not very good at making those seemingly simple pies at all) 2. a frosted black walnut layer cake .. does anyone have a tried and true recipes for either of these? I saw someone said in an ancient post about black walnuts "they are the cilantro of the nut world" that is so funny really I have seen folks just shiver at the thought of them! they are very good in ice cream and cake but i have only had small amounts at a tim.never had to open them they look complicated ..flavorwise …a little goes a long and no way did I ever expect to have this many to do things with! I am kind of excited my son is not a fan and said to "feed them to Bacon" oh HELL NO ..I am eating them before Bacon gets them he can have the acorns I get the black and English walnuts ! now how do I clean and open all these???? I was also gifted by my smart ass son 200lbs of apples that need dealing with NOW ..OY!!!!
  21. I am very happy to share and I bet you can find "better" renditions of this online ..I did a search of "soy bourbon marinade" and a bunch popped up. But I have seen similar versions on EG ..I may have posted one so if this is redundant I am sorry I have marinated beef in this and made a really nice stew as well so it is great for slow or fast cooking ..we always drained and dried the meat really well before putting it on the grill but used the low to high cooking method and turned the meat frequently when cooking .. to my step mother and grandmother (who btw hated each other LOLOL!!!) this "was" London Broil and it was always made with top round of beef 1 part good bourbon 1 part soy sauce (I use fish sauce now and like it better) 1 shot or 3 of Worcestershire or I use Maggi from Germany 1 part sour fruit juice concentrate (they always used the tiny cans of frozen concentrated orange or pineapple or if they felt wild it was the combo of orange and pineapple juice!) I find pineapple and orange too sweet unless you get bitter orange then you are lucky! ..I use sour grape, plum whatever sour apple is very good and tenderizes nicely but thick almost syrupy stuff you need . 1 part whatever sweet you want but make it sugar nothing artificial here ..honey, maple syrup, brown sugar, molasses, palm sugar jThe juice of lemon or lime along with some rind smashed garlic to taste (I use about 5 cloves ) grated ginger ( I use about 1/4 cup) 1 minced scotch bonnet pepper minced (even in Providence RI in the late 60's early 70s I remember her finding one to go in) smashed lemon grass if you have it is great in this (2 stalks smashed ) add some kind of mustard that comes to about 1/4 part in flavor dried or wet…my step mother used a big spoon German brown mustard , I toast black mustard seeds then grind them and put a spoon of that in) fresh finely ground pepper ..to taste
  22. it is quite old my grandmother and my step mother did both make great "London Broil's " out of top round and she always had one cute "the other way" ..I never figured out what the heck she did ..she grilled it hot and fast then wrapped it in foil. It was one of her two dishes we all really liked or could eat. I have the marinade she used down pat but the way to ask for it to be cut ..sadly I never paid attention and I should have. I can make a good one ..hers was great and I would love to try but beef is way too expensive for my budget now.

I have sent two back to two different companies because they both were crap and absolutely no improvement on using one foot to pop a lid open ..not to mention the batteries burned up so fast it made no sense at all .. spend your money on a good solid old school pedal trash can that requires you to really use your foot to defeat your kitty ..my dog figured the pedal out so I put a small loaded mouse trap in the trash a few times that worked perfectly but I have a giant headed stubborn assed dog and really it may sound mean but so does surgery if he eats dangerous trash I agree with MSRadell
  24. just a little back atcha about the pots? To cook in? they absolutely with out a doubt crap to cook with …so in my humble opinion and with out any doubt these were never intended to be used as cooking pots I bet they were hang them on the wall and pretend pots..(I would never call this a true test of my ability to cook with copper pots) ..but these? ..the heat is not even it is like cooking in cheep aluminum pots and I was just not sure about the lining… I dented the lid when I dropped it on the floor then accidentally stepped on it and really if it can not even pass that ..what would happen when I finish a stone floor drop one of these and step on it ? my husband is turning them into a fountain outside the kitchen window because we need more projects up cycling more crap thanks so mjuch for the input!
  25. // wonderful air fresheners ! it has started raining and the quince are about 2 lbs a piece so they are falling off my tree and very dangerous right now ..OUCH!!! so I have to ripen them indoors …I make quince paste and quince tea and put them in Persian food dishes a lot ..the smell is so good I feel like I am in some kind of tropical paradise instead of on the Puget Sound watching a pig dig to China in the pouring rain …my back yard right now …I really hope Bacon loves quince the tree is loaded and the food bank will not take them….I could sell them to the Korean mkt I guess they bought some last year from me
