  1. JP is an interesting case. Classically trained, moved to NYC and hung out with the culinary hot shots but never had a place of his own and then only a short while in later life. Worked for Howard Johnson ( I want to believe that he invented the top-loading hot dog bun) and did TV stuff. Wrote good books. Beloved. Outside of the accent, who is more accomplished him or Puck or Flay (or Garten for that matter)?
  2. Not a 2021 book. But it's new to me and it is 2021...Appetites, by Bourdain. I wish I had it 30 years ago. Basics are well taught by example (as opposed to explicitly) and strategy of cooking is discussed. Many good recipes too. His day-by-day Thanksgiving planning is helpful, mine eventually evolved to be similar to his (with the exception of a stunt turkey). This would be a great gift for a new cook. Kind of bittersweet. I doubt another author will ever address his reader as "fucknut"

If I had had my glasses on I have seen the slop on the cups Cornbread madelaines with and without jalapeno Au gratin pots Warm sprout, cranzin and onion slaw Not shown tenderloin, sticky toffee pudding

    Lobster Pot Pies

    I'd have no worry about an hour at room temp starting hot out of the oven. The commercial regs probably say hold at 56C. Any concerns about getting soggy pastry after an hour?
  6. It is good for that, but after pressure, my fagor can be used to reduce the stock too not that I'm a hater

  9. Instant pot- gave it to my daughter-my old Fagor is faster and hotter Zoj. Ricemaker- still in vigorous use SV Supreme and Anova 1.0- weekly use Big SS griddle- Occasionally Spiralizer- Never once used...but maybe one day Breville Smart Oven- Daily use, Invaluable Cuisineart Steamer ( a eG-related gift) daily use invaluable Blendtech Bass-o-matic frequent use

    Coating for cheeses

    I've never done it, but I think I'd coat the soft cheese then freeze it before frying. You might also pre-toast the breadcrumbs so waiting for browning isn't an issue.

  16. LOL. Not lazy, perfectionist. Done sous vide its perfectly done every time on autopilot. I can compulse over the other stuff and be a host too.
