    I have cooked venison loin SV using the times findable here on eG, given it a quick sear,and served it with a cranberry infused beef demiglace. Really delicious.
  2. I'm an eater, not a chef. This guy made the classic error of asking a question that he didn't want to hear the answer to. Too bad for him. Honest feedback is helpful esp from a repeat customer. Assuming you were as civil as you seem, you couldn't have been out of line. I would say that his snotty response should earn him an outing on Yelp or Trip Advisor. I'm not a fan of revenge reviews, but this creep has crossed a line of decency. Its nice that he's the owner too...innocents will be spared in this case.
  3. University "technology transfer" lawyers are usually completely out of control; at least the ones that I've had the pleasure dealing with. Sounds like it would be a tough patent to defend.

  5. I grew up in miracle whip house. It was a modern advance and, in some ill defined way, healthful. I like it in devilled eggs ok and I can taste it in certain pot luck dishes. Now that I know what it is, I have tasted Durkees in stuff too.
  6. Like Chris, I am a thrifty sod and can't happily make a cup of mayo when I need two tbsp. Hellman's is my usual and I will readily modify it with sriracha, chipotle, adobo, garlic, lime etc on an as needed basis. With modifications it approaches home-made.

  9. Never had a Wendy Burger I liked. I wonder if meat varies around the country. The Wendy meat here is crappy.<br /><br />For BK I do a double whopper with cheese no pickle no onion, or a double Stacker. Stackers seem to vary a lot in reproducibility whereas the whopper is the same time after time.<br /><br />Hardees I see rarely and it always surprises me by being so tasty. <br /><br />I forgot Jack in the box. Its in my bottom tier. So is Crystal.

  12. I agree RE Bertuccis, a northeast chain. Reliably good pizza but the rest of their menu isn't great. Pasta is mushy and chicken dishes are similarly overcooked.

  14. It is equally possible that you need to taste good pizza sometime. No, it's not. I've had good -- even great -- pizza, though not from Papa John's. All I'm saying is that your single experience with their product doesn't match my multiple encounters with it. Yes. You are right. I was responding to what I read as being a dismissive answer.   16. Yesterday I was trapped at a hotel at a interstate exit in Wyoming with no car, no restaurant, no room service and nothing nearby. So I ordered from Papa John's (who would deliver). It was brought promptly, with a pleasant delivery person, and was just wretched. The crust was OK under the circumstances, but sauce was barely present, and the cheese was some strange stuff in a thin layer over some of the dough. It looked painted-on. The pizza came with packets of parm, spices, garlic and red pepper. E ven taking into consideration that I was in Casper, WY, it was just awful. So are there any national pizza chains that can be trusted?
  17. God help me, I'm beginning to enjoy the bleached blond sod. At a certain time of night, after a few beverages, his show is visual drunk food. I usually end up making a sandwich with bacon in it. I still won't go in any of his places though.

  19. You can walk anywhere in center city to South St ...to university city...and all the way south on Broad St. But I wouldn't walk very far north of about Callowhill St without some protection esp at night and esp if the kids don't have "city reflexes"

    Why not intern at Lidia in the burgh and work your butt off and then use that connection to move to one of her joints in NYC? I can't urge you too much to keep debt as low as you can.

    Why not intern in Pittsburgh? Avoiding debt is especially important early in any career. Build your resume and then try NYC.
