Family is out in Utah doing stupid things in the snow. Just me and the 3 month old airedale puppy (Henry) tonight. Meatloaf and puppychow respectively. One of us drank a nice cotes d rhone.

Try freezing all your flours/grains for a couple days after you buy them. Works like a charm. Just keep them sealed after the freeze.

At Janssen's, a local "high class" supermarket, they have d'artagnan goose for $100 for about 8lb bird. And they sell it, amazingly enough. I think rabbit is somewhere in the $45 range

Never made it myself, but over the years I've had nothing but overcooked rabbit (except once at The Fountain in Philly). With the thin bits of meat is seems like it would cook quickly. Whats the best way to cook it?

I notice cracks where the weeping occurs in some of the candies. Could the crack actually be the main issue?

Salt the meat and form it and refrigerate it overnight? Salting makes meat a bit sticky. I doubt that they use transglutaminase but that would work, I bet

I really think that Grayson was toast from early on. Padma gave her the stink eye on the first show. Good for Grayson that she didn't disappear without a complaint about the decision.

It was a little potato...maybe 3 bites. I didn't par cook it. That sounds like a good idea. The ends were a little dry. Slicing tip...put the spud between two chopsticks as a knife guide.
