  1. Water bath + flask + sink aspirator or vacuum pump = about $200 A little slower because of the lack of rotation. Ebay has rotary evzporators for around $650
  2. I agree. Wagyu doesn't need the tenderizing but SV would get your temp right. Then a sear. And I agree I'd have a few degrees more than your usual temp.
  3. Even low grade canned tuna is great for fish cakes. Egg, bread crumbs, capers, mustard, salt and pepper. A perfect quick pantry meal.

  17. CSOs only fault in my eyes is that its a bit small. Fitting a 1/4 sheet pan would be great and allow many more normal-sized baking dishes. Its also sealed so tight that that wet food will steam bake even with the steam turned off. Roasting cauliflower isn't easy.
  18. Tastykake advertised that they went back to the old pie recipe last summer. The implication is obvious. Having said that I still like the krimpets. And I still cut each of the 3 chocolate cupcakes into quarters using the cardboard base as a knife. Just like I did in 3rd grade.
  19. That sucks. There's still a few shad fishing companies around Trenton, I'm told. BTW have you read The Founding Fish by princeton's own John McPhee? Great shad book by a nonfiction master. Shad are a popular topic down here south of philly. Colonial era dams are being removed from the Brandywine and White Clay creeks and shad have returned. Just hickory shad so far, but that's not nothing. http://www.efrankhopkins.com/ Says they carry shad.

    Me too, I just wont pat $30 for a strip steak. Oddly, Dartagnan stuff sold through Giant supermarkets is much more reasonable.

    D'artagnan ain't cheap to consumers. Sales are occasionally good prices, though. And Costco web site has occasional bargains on their duck I'd love to see their trade prices.
