Pille, thanks for sharing your wonderful blog. I couldn't wait to read it each day. I made your Curd Cheese and Apple Souffle today...one word:delicious! The only change I made was to put a layer of apples on the bottom of the springform pan and sprinkle a little cinnamon on top of them. I will be making this often. Thank you for posting the recipe.

I keep mushrooms in a new, unused terracotta flower pot with a paper plate over the top. They last at least a week without getting brown or slimy.

I have used them in chicken pot pies when I was too lazy to use fresh ones or when in a hurry.

I do it the way Melissa does. We have a friend that roasts them outside in a rotating "cage" and they are to die for.

I always store ginger in the freezer; just toss it in a plastic bag. I take it out and grate or cut a piece for however much is needed. At one time I kept it in the fridge but it shriveled up or molded before I got around to using it. I haven't had that problem since keeping it in the freezer.
