  1. It might help to know what your steps are.... Do you make a strong broth by roasting the bones you use? What spices do you add to the broth? Do you clarify the broth with a raft? Are you cooking it at too high a temperature? Inquiring minds want to know...........

  3. A small bowl of vegetable beef soup with a slice of buttered swirl pumpernickel bread. Just the right thing for a coldish morning. I'm going to put a pan of baked oatmeal in the oven later for tomorrow's breakfast ... after shoveling snow AGAIN.

  5. just read Kaukasis by Olia Hercules. I say read because for me this is a reading cookbook. Also picked up Madhur Jaffrey's Vegetarian Indian from the library. more to come........
  6. I just tried them as well. Also hit them up at about 11:30 am and they were fresh out of the fryer, hot and crunchy. I agree with @munchymom salty and sweet but not really spicy. Finished all but two of them before they cooled enough for me not to find them enjoyable. I really like that they are a reasonable sized serving for a buck.
  7. 56F here right now....dropping to high 20s later today/tonight. I bought a small piece of beef to make beef vegetable soup later after all the running around and doing chores are done. Carrots, leeks, parsnips and turnips I do believe.
  8. really hungry this morning and tons of chores to do today.... small bowl of tomato fennel soup with an open faced sandwich of lacey swiss and Black Forest ham on swirled pumpernickel.

  10. Had to run some errands this afternoon then decided to go out to linner at a local Asian restaurant. It's neither Chinese nor Thai but an amalgam BUT having said that it offers some good food we love. Johnnybird had the shrimp steamed dumplings with a ginger sauce and Pad Thai with shrimp. We shared an order of scallion pancake also with a ginger dipping sauce. I had an order of hot and sour soup (with extra vinegar as it is never balanced enough for me) and vegetable spring roll with a sweet and sour dipping sauce. I also treated myself to a Thai iced tea. For dessert I had made a dark chocolate pot de crème and topped it with some Amarena cherries.
  11. It IS a thick ganache but this is what my husband likes. I don't remember why or even when I did that since I have been making this recipe for at least 30 years!!!! I have never had it break on me or seize......
  12. not baked at all. The original recipe had 2 cups of scalded milk that the chocolate was melted into. No gelatin either.

First I put 8 oz of dark chocolate(pastilles or chips or chopped block) the top of a double boiler with heavily simmering water with 1/4 cup of heated nutmilk into which I have dissolved 1 Tbsp of decaf instant coffee. Cover and let sit about 10 minutes. I separate 6 eggs then beat the yolks with 1/4 cup sugar and a pinch of salt over simmering water until they double in bulk. I whip the whites to medium stiff peaks. Incorporate the melted chocolate into the egg yolks SLOWLY then whisk in about 1/3 of the whites to lighten and fold the remaining whites in. It's a variation on the recipe from Fannie Farmer.
  14. Making a dairyless dark chocolate pot de creme for Johnnybird. I'm going to put it into cups and top with some Amerana cherries and some faux whipped cream.

  17. @MetsFan5 - pan fried is good, especially now that they sell individual slices. Growing up I did like it baked with the cloves and pineapple......course I liked fishsticks and frozen French fries, too. with ketchup.
  18. At this time of year up here in northern New Jersey I would take you to Calandra's Italian Village. Good bread, pizza, pasta. Or perhaps for Indian food in Morristown. Or noodles at Shan Shan. Easier if you came to visit in the summer...... down the shore we would have all kinds of fresh seafood, fresh corn, tomatoes and blueberry pie!!!!!!

  20. geezzzzz.... I feel for you as John tends to eat the same way as your GF. I have gotten up to go to the bathroom around 1 am and found him having a huge bowl of pasta with shrimp or something else.........no wonder his sleep time is between 2 and 5 am
  21. @robirdstx.....Oh that brings back so many, many memories!! When I would go out to visit my mom one morning our breakfast would be fried flounder(she always dredged in cornflake crumbs), the pound of bacon that was tried out to get the fat to fry it in, boiled potato(just in case there was a stray bone or two) with butter and parsley and lima beans. Hard to believe it's 27+ years she has been gone....

    Was craving meatloaf and decided to try something I had seen on The Kitchen...Sunny Anderson's meat and potatoes bundt loaf. I have a half sized bundt pan so halved the recipe and was really surprised - IT WORKED!!! The meatloaf came out fine and the potato "topping" was crispy and crunchy - kinda reminds me of the crispy bits from a broiled macaroni and cheese which I love. I didn't pour the sauce over the top of the loaf but served it on the side along with some peas and carrots, my favorite side dish with meatloaf.
  23. why do I keep hearing breakfast....second breakfast....elevenses....lunch......second lunch.........in my head I usually eat some protein and fruit around 730 am most days....lunch is around noon.......maybe a small snack of fruit and protein again around 3 then dinner.
  24. Most of the way through A Fork in the Road which is an anthology of short pieces by authors. I have read some of the pieces before, like Josh Ozersky's and Marcus Samuelsson's but still fun to dip and taste whatever I want. I'm also about to start The President's Kitchen Cabinet which is about the African-Americans who have worked for the presidents of the United States. I had also read his book called Soul Food and found his scholarship spot on and his writing style is so smooth.
  25. Greetings! Like @Kim Shook I love to live vicariously through others. Any chance we might be seeing some seafood and rice and piri piri chicken and egg tarts? Cook on!!!!
