Enjoying very late for us - a Mai Tai And lamb stew - grabbed a couple of packages of lamb bony cuts and shoulder chops early this am - Anna transformed them in the IP into stew.

Not a pretty picture by any means - but this is the fridge in my chocolate room - lots of great earth magnets from Lee Valley hold all sorts of stuff on the front of the fridge. Some have hooks, others are just little circles - on the sides there are more - and a magnetic knife strip that holds dozens of little offsets, bone handled knives and Ateco scrapers. -

Ok hive mind - need a little help here. This was an impulse buy at Homesense in the clearance area. They were shiny - my internal magpie had to have them! They are stainless beer growlers with those lovely little built in handles. They don't fit in the instant pot (which would have made them useful for rendering fat). If I were into making vinegar these days I'd probably use them for that - if they weren't so big then barrel aged cocktails might be a use. Help me!

While you guys are talking cheese - I'm drinking! Cin Cyn. Just had a visit from an OPP detective - wondering if there was any chance we were awake and heard anything the other night when I was on call related to an incident that happened very close to our condo. I think she got her hopes up when I said - yeah I knew about it - "when they called me from the ER to say they had brought the individual in" - hopes dashed! Anna told her she'd sleep through her own assault - and the rug rat was unable to say anything (as per usual) - so she didn't feel it necessary to take down her name and date of birth.

Don't recall if I've written about these before - I use a recipe that was given to me 35 years ago by the wife of my boss in the lab when I lived in the Queen Charlotte Islands - like so many military folks and their families she was from down east - Cape Breton to be exact. Cape Breton "Pork Pies" Ingredients 2 ½ cups dates, 500 grams ¾ cup brown sugar, 150 grams - used 100 g 1 cup boiling water, 250 grams ¼ tsp salt 1 tsp vanilla Pastry dough 1 cup butter, 225 grams ½ cup icing sugar, 62.5 grams 1 egg yolk 1 tsp vanilla 2 cups flour, 280 grams 2 tbsp cornstarch, 20 grams ¼ tsp salt Icing ⅔ cup icing sugar 1 tbsp maple syrup 1 tbsp soft butter Method 1.Form pastry into 3/4 inch balls and press into small tart cups. Bake at 300 degrees for 18 minutes or until just litely browned but firmed. 2.Make filling by pouring boiling water over chopped dates, salt and brown sugar, Cook for a few moments on stove, until dates soften but are still formed. Add vanilla. 3.Beat icing sugar with butter. Heat maple syrup and drizzle into icing sugar mixture until light and fluffy. you may need to add more maple syrup. Top with icing.
