It's pretty dark with the egg wash - but doesn't taste burned at all. The pics in the book and online show it pretty dark as well. -

If it's too dry to eat - slice, dry well in oven and use for a nice lemon bread pudding - alternate bread, globs of lemon curd and custard. -

Spent the day at Gouter with @Alleguede teaching panning. Digging for doubles - coffee beans on the left, raisins on the right - two of the most difficult things to pan. Is it cruel to teach that on the first day of a course? Maltballs (not mothballs as I kept trying to call them). Reese PB cereal with PB gianduja. Our lunch - tourtiere, quiche, salad. Yum.

Kind of slim pickens in the United Lounge. However able to get some cheese when they put lunch out. Edemane for the salad which was a nice addition. -
So I was talking to Brian again yesterday - he says he will make sure there is something for us on Thursday at Tomric - perhaps not as fancy as in the past. Sorry I didn't find this out earlier.

Dinner tonight at Farmhouse Kitchen Thai Cuisine Earth tea for me - lemon grass, ginger and honey. \ Various versions of sticky rice. Pork belly Peanut sauce. Soup for 4 Crab fried rice with bone broth. Short rib panang with broccolini and blue rice. -

Here is the lovely Kiwi gentleman for whom we made the meltaway in the bathtub! He was very happy and may just eat them all himself. He told us he lived out in the country on the north island in New Zealand - had never been out of the country and didn't have a passport until the week before he travelled to SFO.- 89 replies

If anyone has a copy of Bernard Clayton's The Complete Book of Pastry - perhaps they could look it up. I'm away from home and don't have access and can't find it on Google books.
