  4. Usually you can talk a really nice butcher into ordering it for you, or if you're near a Chinatown, you can usually find it in a meat store. Sometimes in sausage supply stores, too. HTH!

  6. I don't. Share. My eclairs. Whenever we go to back to Montreal to visit my family, I always stop at my favorite patisserie and stock the fridge with 2 or 3 eclairs. For my own consumption. Somehow everyone knows this. Except for my brother in law. I really had to hold my tongue one night when he took the last one, ate it all in front of me, then asked, "Oh, were you saving this?" ← That, my dear, is a man that "jess need killin"!
  7. Interesting find, but... somethings amiss with that first one. I mean, my God, I've never been north of Hot Springs. And I'm expanding that a little farther into the frozen north next week when I go to Nashville. I only scored a 58% southern rating. You certainly can't go by that thing. ← Amen! Y'all is NOT singular! Two or more is y'all; one is just you.

  9. I lived in D.C. and agree that it is in may ways the Northern most Southern city, but where are there good ribs and who is eating the pig's feet? ← Go out to where "the Help" lives and you'll find it all.
  10. Oh, puhleez! Where do think the microplane zester go its' start? My old fashioned potato masher (the kind with the "s" curves) used to live on the pull chain of the overhead kitchen fan, which was just a leedle bit too high for me to reach easily

  18. Wow there are a TON of names for these I hadn't come across before, ("toad in a hole" I knew) I particularly like Kouign's "goldmine sandwiches", and shellfishfiend's "nest eggs" are very cute. I agree that it's nice if you can toast up the center to dip in your yolk, but I always end up eating it while I'm waiting for the rest to finish cooking ← We (I, only, now) call them "One eyed Jacks" and invariably ate the fried toasted middle bit of bread before serving them to whomever. With sausage or bacon...

    garlic bread

    1 long loaf of cheap grocery store "Italian" or "French" bread 1 stick of salted butter, softened to room temp. Lots of cloves of garlic, run thru the garlic press (a totally different flavor from minced, or smashed) Kosher salt Mix together well the butter and pressed garlic (amount adjusted to taste, in this house it's usually about 5 BIG cloves) with a good BIG pinch of kosher salt, and let set for about an hour at room temp. Slice the loaf the long way, spread on garlic butter and bake on a cookie sheet at 325-350 for about 10 mins. YUM! Add parsley or other herbs to butter as desired, and if going for the gold, drape sliced cheese (of your choice) over the bread after about 7 min. baking time, and let bake further until melted and gooey.
  24. Pig, in any way, shape or form, except chitlins and kidneys. Beef, seared crusty brown on the outside and damn near raw on the inside, even quality hamburger. Roast lamb the way my Nana made it; chicken thighs sauted with nothing on them but the hot oil; cold left-over steak cooked very rare, sliced for lunch the next day. A beautiful sub made with extra rare roast beef, lettuce, tomatoes, lotsa onions, Provolone cheese, Balsamic vinegar and mayo (yes, dammit, Hellman's!) Can you tell I'm a meat junkie?
