  3. I've started Duck legs are in the fridge for their overnight "salt". I'll be aquiring more ingrediants tomorrow. How fun!!! Great idea!
  4. Della and I tried Pancho Villa yesterday for lunch. YUM!! excellent carnitas. We also ordered 1 ea. of the tamalas- pork and chicken. Both of these were great too. And the service is very nice. It's so close!! We'll be back. Thanks for the tip Anita.

  6. I'm off work all this week so I'm excited to spend a few afternoons cooking! Tonight we started with smoked salmon on cucumber rounds with creme fraiche Followed by Tuscan style shortribs with Balsamic Glaze, roasted garlic mashed potatoes and artichoke hearts stuffed with spinach, raisons and gruyere. Served with an Erath Dolcetto which went perfectly!
  7. ms. ramsey....DUH! I totally spaced on that! Well I found the duck legs and duck fat at Whole Paycheck. They have quite a few packages of duck legs and breasts fyi. Will hit the ID on Wed to try to find the pork products. Can anyone recommend a particular grocery?

  9. I made white cheddar and bacon biscuits in my new food processor yesterday, warmed with a pat of butter. had them for breakfast today too!

  11. Good morning! I'm off of work this week and have decided to participate in the eGullet Cook Together. We are making cassoulet and I want to make my own duck confit. I always see whole duck but does anyone know where I can just get legs? I've never asked so possibly this is not a big deal for Don & Joe, AJ Meats or Whole Paycheck?? Also where can I buy duck or goose fat in the city? Thanks!!
  12. I feel that I totally scored! FL cookbook, cuisinart food processor, digital kitchen scale, new Henkle Twin slicing knife, duck foie gras in armanac from Fouchon (mmmmmm!), 'Kitchen Confidential', gift card to Williams Sonoma.
  13. I'm planning on trying the Les Halles recipe this week. Will make my own duck confit as long as I can find legs but will buy the sausage. Creating a shopping list and will head out tomorrow to forage! fun!
  14. fellow eGullet member Della and I made Christmas dinner for my family. Lunch was appetizers- a group contribution of deviled eggs, crab dip, latkas with creme fraiche and caviar, smoked salmon Dinner was very traditional: Salad, homebaked (by MIL) rolls, Turkey rubbed with herb butter and stuffed with bread & celery stuffing, gravy, green beans with pancetta, roasted yams tossed with onion confit and sage butter, mashed potatoes with creme fraiche and butter, cranberry sauce. Pumpkin pie for dessert (baked by Dayne)
  15. When are we doing this?? I'm off work next week so I would love to play with a long cooking recipe. I have Les Halles and Bouchon and will read thru them!

  17. Cow whisperer, that is truly an exceptional meal. I have the Amuse cookbook and love it but I really need to get the FL book. Fantasticly done!!! bravo!
  18. Dayne took me to Le Gourmand last night for my birthday. We had only been to Sambar and both really were looking forward to it. The interior is just too funny! But somehow it works for them. Anyway I would love to see that overhauled but that is just me. We started with glasses of bubbly. They had a full house, it was busy. We decided to not go with the tasting menu although it sounded great but just went with the regular menu. I was surprised at how reasonable it was- 3 courses for anywhere from $30-$45. I was thinking it must be quite outrageously priced since we hadn't been before! haha! I started with the quince, apple and garlic soup- heaven. Dayne had Sally Jackson Sheeps cheese blintzes...YUM!!! I had the rabbit with mushrooms and Dayne had the beef ficelle. Both dishes were excellent, cooked perfectly but the SAUCE!! Holy this is some good stuff. I honestly have not had a sauce that rich and beautiful in the states as far as I can remember. The stock this kitchen is making is serious stuff! Fantastic. Salads came after, with homemade mustard vinaigrette. We had an excellent bottle of wine, their wine list has some real heavy hitters! Can't remember it off hand but I'll edit this when I'm home tomorrow with the info. Fantastic cheeses after, no room for dessert (although they were serving a mini bouche de noel that was hard for me to resist). A few glasses of Sauternes after. Very good, we'll definatly go back and we'll try the tasting menu. Chef Bruce talked to us for a while, he is very passionate about what he does, holds classes on the last Sunday of each month I think he said? He told me he has had the restaurant for 20 years. I'd say that is a huge accomplishment in any city!

  20. Stopped in the Cheese Cellar again tonight after finding out they are the only ones who still carry Roblochon, no one else can get it any more since it's under 60 days old (???) Anyway Dennis is great! We also had a taste and bought a cheese that is part cow's milk and part sheeps milk with truffle bits in it. That will make a damn fine Alfredo! He said this is the perfect time for Humboldt Fog so if anyone needs that or anything else I would stop in!

  22. I was at Union restaurant in Seattle last night and they had this on their drink menu. It didn't mention the Reisling though?? The bartender mentioned something about DrinkBoy's website. I didn't get to taste it as we were drinking Duetz. sounds very good though!
