  1. While we are taking judges off the show I would take the other guy off too.. Just leave Steingarten on.. I would like to see food critics and writers judging.. Maybe even Alton Brown.. But certainly not the two they are using..
  2. My girl is going back to Atlanta again tomorrow.. Staying in Buckhead, this time I will be with her.. We are staying for three nights and are going to Kyma, Blue Pointe, and Bones.. Any new places open up there? Any major criticisms on my decision.. I am going to be working all day and dont really want to travel far away.. Will probably cancel one of the reservations and eat room service out of being exhausted..
  3. It was clear that the one woman judge did not understand the Sous Vide method.. When she tasted the Talapia she commented that it was "overcooked" and "mushy"... Sure it might have been mushy, but to say it was overcooked is incorrect..

  5. If will still mantain.. If someone can show me a study that shows the health of Restaurant Workers has improved, I would be happen to give another freedom up.. But not before... A study that tells me there is less smoke in the air when people arent smoking, is not going to do it..

  7. The work environment were made to change once the health effects were directly connected. Cirilo ← Ok.. So show me the direct connection.. Show me studies showing the health improvements of New York Restaurant workers passed personal experience.. Show me figures and facts.. If its so harmful and deadly proove it with facts that clearly should be there in countless cases of restaurant workers..
  8. Slkinsey, My reference to taking the punching out of boxing would result in the ban of boxing all together.. Also, besides air testing, if this is such a problem, there should be countless studies showing the affects on the workers.. Are the studies or cases showing the there are alarming numbers of restaurant workers dropping dead or getting more sick then non restaurant workers?
  9. I have heard anecdotal evidence of people being affected by working around smokers.. The restaurant industry is a huge one with many employees.. I wonder if any studies have been done to proove either way if restaurant or bar workers who dont smoke have been affected.. Again, not on the individual case but there must be statistics..

  11. OK.. So this is the part where we disagree.. I believe its the employee that should conform to the business.. You believe its the business's job to conform to the employee.. I believe a person has the ability to look at a job and choose if its what they want to do.. I.E Should buildings be made lower to accomodate workers who are afraid of heights? Or what if someone wants to be a boxer but doesnt like being hit? Should we remove punching from boxing to protect the worker? Smoking existed before these people took there job.. If you are going to give me the example of the poor worker who has no other option, its simply not true.
  12. We are talking about a legal product.. Until cigarettes are made illegal, it is still legal to smoke them.. As long as we are protecting non-smokers who are forced to go to restaurants against there will.. I think restaurants should also be forced to provide Kosher Meals.. What about the poor helpless Kosher people that cant go to the BBQ Restaurant.. Or what about the Vegan.. Restaurants should be forced to provide full vegan meal as well.. Also wheat free and whatever else people are allergic too.. They do it with peanut butter in places..
  13. Yeh.. I think people miss the point when speaking about smoking Ban.. Your personal preference on whether you like to smoke has no bearing on the issue.. The real Issue is Owner Rights, whether the government can come into your place of business and once again tell you what to do.. The business owners freedoms have been slowly chipped away..
  14. How haughty? Actually, being an employer in New Jersey I am pretty aware of the work situation.. Particularly in Northern New Jersey.. I think to make this ridiculous scenario your reason to ban smoking is outrageous.. If you pick up your paper and look in the back you will see many jobs outside of the restaurant industry..
  15. I quit smoking when I got sick about four months ago.. I dont like the smell of smoke so much anymore. So I personally might like it better to be in a smoke free environment, but I too am against the taking away of owner rights..
  16. don't forget the workers. ← Its your choice to work in a place that has smoking.. And if State would try using this weak arguement how could that State possibly not stand up for those helpless casino workers..

  18. Any website for supporters of business owner rights? Why dont Restaraunts have the same crooked lobbists that Atlantic City obviously has.. How could the casinos sneak by on this "important piece of legislation"

  20. Hey Tim, This sounds really interesting.. Can you give us some backround on your situation.. Where are you working.. Main residence, boat, vacation home.. Who are you cooking for, family, one person, business... Do you cook for staff as well or just your client.. Whats your set up like? Is there a servants kitchen, do you cook off site, are you a live in, or travel with clients.. Thanks
  21. Spaghetttti, I couldnt agree more.. There is nothing more upsetting then getting a soggy grill cheese... I can see pulling off the aluminum container with the water dripping from the top lid.. The cheese has reformed, making it cold and thick, the bread is wet.. Ugh... It then needs to be heavily salted and dipped in ketchup to save.. A tie for me is French Fries.. Delivered fries, all starched and cold.. Nothing is worse.. If I get them delivered I have the oven already on waiting to reheat.. The second I get my food delivered, I take all the tops off the food to stop that horrible steaming process.. Cesar Salad is up there on the do not dilly dally list..
  22. I made mini square burgers with lamb, I used martin mini dinner rolls.. Made a double decker with chedder and onions..
  23. Chris thats exactly what I say when I describe tasting an oyster or sea urchin.. Its like eating the ocean..
  24. To end the story on my latest experience at the Frog And The Peach, my entire meal plus gratuity has been refunded. I had been contacted by the Restaurant and it was handled perfectly. It shows me a lot. As anyone in business knows, there are times when a mistake is made. The companies integrity is displayed by how it handles it. I am very impressed..
  25. DCFoodie.. You know what they say, no press is bad press.. I would take this to a newspaper.. It can only make people aware of your website! Is this Chef the owner of the restaurant. Because I wonder what the restaurants opinion on the matter, or who is the true owner of the intellectual property..
